Toasted Pumpkin Seeds with Sugar and Spice

I'm giving this 5 stars because it is amazing, with a LOT less sugar and I want to make sure people try it. As it stands, I could have never eaten it with that much sugar and probably would have rated it 2 stars. Here's what I did: I used 2 T Splenda in the coating mix (with salt and pumpkin pie spice made from the Pumpkin Pie Spice II recipe on allrecipes). In the frying pan, I used 1 T olive oil and sprinkled about 1-2 T sugar on it, stirring for about 2-3 minutes until the sugar melted. Then I tossed it into the coating mix. It was definitely sweet enough and the seeds are amazingly addictive!

Key Lime Pie VII

I never made Key Lime Pie before, and I swept the prizes at a pie bake off contest at work with this pie. I had several changes though. I made the crust with 1/2 c roasted macadamia nuts, 4 T coconut oil, and 1 packet of crushed graham crackers: press into pan and bake 10 min. For the filling, I used about twice as much zest. For the topping, I used Emeril's recipe- mix 2 T powdered sugar into 1 c sour cream, and spread it on top after the pie has been chilled for about 2 hours in the fridge. In the morning a put a ring of zest around the outside of the pie, made an overlapping circle of lime slices, and put a few raspberries in the middle. It was amazing, there was none left, and people were asking for the recipe! I will definitely make again!

Banana Caramel Pie II

I used store bought chocolate cookie pie crust and put the sweetened condensed milk in the crockpot on low overnight, as the other reviewers suggested. No other changes, and it was really yummy. It never really "set" though, and it was a runny gooey mess- more like a pudding. It's worth trying again though, in hopes that it was a fluke :)

Cheesy Bacon and Egg Brunch Casserole

I made this for a party of 16 for Christmas brunch. I used homemade french bread and turkey bacon, and scaled up by about 25%. I made the whole thing the night before, saving the egg/milk mix to dump in, in the morning. I cooked it at the same time as the ham, which called for 275 F, so I cooked it about an hour and a half, cranking it up to 350 F for about 20 minutes at the end. Main point: everyone loved it! I will definitely make it again, as it was easy to prepare ahead of time, and quite yummy.

Easy Gourmet Pumpkin Soup

Yummy way to use homemade pumpkin puree already on hand. I made a big batch and froze some for later. It was very good and I will be making again.

Butternut Squash Soup

The spice and thickness of this soup was really good. I didn't add any salt or pepper, and I doubled everything (2 squash, 2 carrots, 1 onion, twice the stock, twice the spices), and only used 1 package of cream cheese. I also baked the squash for 40 min at 350 after poking a few holes in them. Really yummy- would have given it 5 if already included my changes :).

Steakhouse Black Bread

Really good as is, though I can really taste the coffee. I recommend not telling everyone what is in it- it is better if you can't recognize the coffee taste :) Very nice color, shape, and flavor- and easy to make!

Cedar Planked Salmon

This was a huge hit!!! We bought 2 large salmon fillets for mother's day dinner. One was marinated by the store and the other we marinated according to this recipe. We grilled both on cedar planks and this recipe was MUCH better than the store marinated version. DELICIOUS... we will make again and again this summer!

Mandarin Pork Roast

This has the greatest sauce! My family LOVES this recipe. I actually double the glaze recipe, cook half in a small pot on the stove to thoroughly heat and put it in a glass jar. I use it as a dressing and with leftover pork in whole wheat wraps with lots of lettuce- DELICIOUS!

Divine Hard-Boiled Eggs

Don't try the cracking with the spoon thing like someone suggested- those were the hardest eggs to peel EVER! Just let them chill according to the recipe.
