Papas Rellenas (Fried Stuffed Potatoes)

I tried this a while back and was very happy with the recipe.The only thing I did different was I used cheddar mashed potatoes that I had leftover after making perogies and found this recipe to use them up.Thanks for this recipe it was easy and tasty, a budget friendly fun dish.

Roasted Lemon Herb Chicken

I used a garlic oil which I make with roasted garlic 1 tbsp & 1tbsp of butter mix in the seasonings and add the lemon,which I slice into thin slices.Place this into your roasting pan and refridgerate til it gets firm.Then I slide the coated lemon slices under the skin.Add some lemon ,garlic and onions in the cavity Roast as usual, there is always enough of the butter oil on the bottem of pan to rub on the skin if desired(we don't usually eat the skin).Thyme and cayenne added to the seasonings add wonderful flavor as well.My chicken was almost 7 lbs (a big bird) so cooking time was extended.Very good recipe.

Super-Delicious Zuppa Toscana

Loved this soup!!The only things I changed was low fat evaporated milk instead of cream and I used both kale and spinach since I didn't have enough of either one.Yum!Every week I make a pot of soup,this will join the others I make regularly.It's great to share with wonderful neighbors who help shovel snow for me,thanks!

Hash Brown Sandwich

I've been making hash brown sandwiches for a while.The only thing I do differently is I bake potatoes in the microwave the night before,let them cool over night, if you don't want the potato skin grated in, cut them in half and grate. the skin protects your fingers from the grater and makes it easier for the kids to help.I fry them in a pan til brown on both sides and use the spatula to quarter the circle .Then put your filling on one side and flip the other side over.You'll have wedges instead of rounds but it cuts out a lot of steps and it's always yummy.I love hash browns so anyway is good for me!

Bacon & Eggs Spaghetti

My mom made a version of this when we were kids,we called it a spagetti omelet,she called it pasta hash.If she made it with leftover potato it was potato hash.Now I'm grown up I call it a fridge dinner,easy mixture of stuff that is leftover in the fridge.Use a little goat cheese if you have it,it becomes very creamy and good.But thats whats great about this concept very easy to suit your own personal taste.

Tender Potato Biscuits

I tried this recipe today,with a few changes. I grated baked potatoes since no one will eat mashed potatoes in this house(1 1/2 c.).Also used 3/4 c. of oat bran and 1 3/4 c. of white flour. They came out light and delicious. I might try the variation of adding cheese and chives the next time I make chili.Also I added the liquid as needed and used less than the recipe called for.Thanks for the awesome bisquit recipe.

Baked Potato

Simple,easy basic cooking,a great recipe to teach kids how to cook! I have never been a fan of potatoes but I have been learning to love baked ones.Make a few extra and slice and dice for baked potato salad,awesome flavour added from baking.My god children (ages 3-17) all want to learn to cook and recipes like this are a great way to start and be successful at it quickly!
