Super-Delicious Zuppa Toscana
Loved this soup!!The only things I changed was low fat evaporated milk instead of cream and I used both kale and spinach since I didn't have enough of either one.Yum!Every week I make a pot of soup,this will join the others I make regularly.It's great to share with wonderful neighbors who help shovel snow for me,thanks!

Hash Brown Sandwich
I've been making hash brown sandwiches for a while.The only thing I do differently is I bake potatoes in the microwave the night before,let them cool over night, if you don't want the potato skin grated in, cut them in half and grate. the skin protects your fingers from the grater and makes it easier for the kids to help.I fry them in a pan til brown on both sides and use the spatula to quarter the circle .Then put your filling on one side and flip the other side over.You'll have wedges instead of rounds but it cuts out a lot of steps and it's always yummy.I love hash browns so anyway is good for me!

Bacon & Eggs Spaghetti
My mom made a version of this when we were kids,we called it a spagetti omelet,she called it pasta hash.If she made it with leftover potato it was potato hash.Now I'm grown up I call it a fridge dinner,easy mixture of stuff that is leftover in the fridge.Use a little goat cheese if you have it,it becomes very creamy and good.But thats whats great about this concept very easy to suit your own personal taste.
