Breakfast. I adore making special breakfasts for my family on weekends. It's also especially rewarding when I find vegetarian recipes when my carnivorous family will ask for again and again.

Was that 1/2tsp cinnamon? Ooops! We used 1/2 cup! Hey, we were 15 and just learning, but wow did that apple crisp taste, um, interesting....

Blueberry Cornmeal Muffins
I'm vegan, so I made some small changes in this recipe. I used ener-g egg replacer instead of egg, earth balance buttery sticks instead of butter, and unsweetened oat milk for the milk. I used slightly more than one cup of fresh blueberries. These were fantastic! If you're looking for a slightly less sweet muffin with that cornbread crunch on the edges, this is it. We ate them all in one day!

Yam and Kale Wrap
We were surprised at how well these flavors worked together. We tried it to use up some kale in the fridge, but now we have it quite often. I generally forget to marinate the kale, so know that it tastes almost as good if you just saute with the marinade just before serving.

Best Brownies
I changed the recipe in this way: substitute 3/4 cup agave nectar for 1c sugar, increase flour to 3/4 cup, lower temp to 325, bake 32 minutes. Agave will keep your blood sugar normal if you're diabetic. It's a great recipe!
