Unbelievable Chicken

Just made this for a BBQ and it turned out wonderful! I marinated full boneless chicken breasts overnight and grilled the chicken at about 400 degrees for 7 1/2 min. per side inside a grill basket I coated with cooking spray. They were moist and juicy and the marinade coating was delicious! Definitely going into my 'make often' recipe box!

Easy Batter Fruit Cobbler

Was super easy to make. I used fresh Nectarines (3 of them) and served warm topped with whipped cream. My hubby said it was very good several times between mouthfuls. If I can get more than one good from him, this means its FANTASTIC! He liked that the cobbler was a bit chewy in consistency too.

Pork Tenderloin with Mustard Sauce

Oh yeah, who had their husband wolf down his dinner in less than 3 minutes because he loved what he was eating? This girl. That's right, I made this super easy pork tenderloin and yummy mustard sauce (tastes very close to horseradish) and it was a wonderful night in my house. This recipe is going into my 'make often' recipe binder.

It's Chili by George!!

This chili recipe has become the go to chili recipe in my household. It's absolutely fantastic! The only thing I change is add some chopped tomato to the mix just because I like that. Otherwise, perfect. I normally make a batch and freeze them in single serve containers.

Banana Banana Bread

Really liked this recipe. However I ended up modifying it mostly because I didn't have enough bananas. What I changed was: 1c. unbleached white flour, 1c. wheat flour, 1c. bananas, 1 1/4c. pumpkin, 1tsp vanilla, 1tsp cinnamon, 1/4tsp nutmeg. Turned out super yum and my 2 year old daughter loves it too!

Sopapilla Cheesecake Pie

Made this recipe to take to a Mexican food potluck. I doubled it so I'd have 24 squares to share. I didn't have Mexican vanilla, so used regular with good results. Super easy to make. Was doubtful about how the crescent roll dough would taste as a dessert but it turns out fantastic. Tastes kind of like a donut with that nice crispness and the inside is heaven. Let's just say they disappeared quickly and I heard moans of ecstasy from those eating these...really! Several people asked for this recipe so will be sharing and adding this to 'make again' recipe book.

Turned out fantastic! I used a Bourbon seeded mustard instead of dijon. Cooking at such a low temperature really helps to keep it nice and moist. Got compliments from the hubby which is RARE.

Awesome Chicken Noodle Soup

This turned out absolutely perfect! The only different thing I did was use 6 Tbsp. Organic Better than Bouillon instead of the dry stuff.

Grilled Mustard Potato Salad

These turned out quite tasty. I forgot to cube the potatoes before boiling them so some were a bit undercooked when finished but still very good. I doubled the sauce mix since the potatoes I used were huge. I put them on non-stick foil on the grill and turned them at about 5 minutes then again a few minutes later, taking them off after about 9 minutes total. Am considering adding chives or rosemary to the mix next time for an extra umph but otherwise very happy with this recipe.

Pan-Seared Tilapia

Very good recipe. I added Emeril's Essence as the spice all over the fish before dusting it with the flour. I used it sparingly, but next time will be a bit more aggressive with the spices to give it a tad more flavor. This recipe is going into the 'cook often' section of my recipes.

Baked Salmon II

I may add less olive oil next time I make this because it did seem like a bit too much. However, with that said, my husband, myself, and my picky 2 1/2 year old loved this salmon recipe. It was ultra easy with wonderful results. Adding it to my make often recipe binder.

Toddler Muffins

I made this recipe for my very picky toddler and she loves them. She thinks they are cupcakes and eats them easily, licking her fingers even. Note that they are very soft when they come out of the oven (may be different if using oat bran, I only had wheat bran on hand and used that) and taste the best if kept in the refrigerator and eaten the next day.

Best in Show Blackberry Cobbler

Wow! Super easy to make and super delicious. Was like a dumpling consistency with the blackberries but oh so delicious! Husband loved it too. Tried it a second time but used wheat flour. DO NOT Recommend using wheat flour, stick with the all-purpose white flour. Why? With wheat flour it becomes heavy and thick and just like eating wheat pancakes. Whereas the all-purpose is light and fluffy.
