Roasted Red Pepper and Potato Soup

Yum. Had 1 red, 2 orange, and 1 yellow bell pepper needing to be used up. Roasted in the oven, paper bag, etc. Upped the carrots and celery to 2 stalks each. used 6 cups vegetarian "chicken broth". Used 5 med-lg red potatoes. Didn't have cream on hand, and was intending to add milk at the end, but completely forgot about. Really didn't need it w/the extra 2 cups broth anyway. Added cumin, curry, dill, dash cayenne & red pepper flakes. Used immersion blender directly in the bowls for those who wanted it pureed (me + 2 kids) and left the rest unpureed for hubbie and son. It's good both ways. Also, threw some baby spinanch in near the end that needed to be used up (1-2 cups). Delicious!

Potluck Rice Pilaf

Yum! What an easy, tasty side dish! Both picky kids loved it, too! Made it with a vegetarian "chicken" flavored broth. I did adjust the water to my usual basmati rice water ratio, which I do 1 cup rice to 1 1/2 cups water. I also cut the butter down a bit, and still worked perfectly.

Sweet Pepper Pasta Toss with Kale

Yum! Added some chopped red onion, and about 1/4 cup of vegetarian "chicken" broth to the saute. Added red pepper flakes instead of cayenne. Thanks for the recipe!

Pecan Turtle Bars

These were really yummy - easy too! As per other reviews, I used 2 cups flour, used about 2 cups nuts (ran out of pecans, put some walnuts in the food processor and chopped much more finely than the pecans were chopped - awesome), I also used 1 cup butter & 3/4 cup brown sugar for the sauce, and it was JUST enough. I used a whole bag of chocolate chips and this is where I may have run into the issue I have had of the chocolate layer separating from the caramel layer, so I will try less next time. Also, made the crust in the food processor - very easy. I took these to a function and they were received with rave reviews. Thanks for a great recipe!

This recipe always gets rave reviews from everyone. I don't use the paneer; instead I bake or saute extra firm tofu (16 oz package), and then put this in near the end of the cooking time. Also, I usually double the veggies and triple the sauce, so it doesn't dry out too much (wonderful w/basmati or naan). The addition of cilantro is nice (if you like it), as well as a pinch of sugar. I plan to try brown sugar next time. Thanks for an awesome recipe!!!
