Chicken Tortilla Bake

My family liked okay, but it just didn't feel much like a casserole ... just chicken and some soup. The flavor was good, if I make this again I might just make the chicken mixture and servce it in tortillas like a taco. We also added much more cheese since we love cheese!

Beth's Spicy Oatmeal Raisin Cookies

Very tasty! I've been making my mom's oatmeal raisin cookies for 30 years and decided to try something new. Loved them, the only changes I made were to use dried cherries (we live in Northern Michigan - cherry country) and 1/2 cup of chopped pecans - they didn't last long! Will definitely make them again!

Candy Cane Cookies II

I also omitted the almond and replaced it with peppermint extract ... much better flavor. They are very time consuming and I was getting tired so I just made mine into 3" "peppermint sticks". They look very cute this way, much less fragile. I took white chocolate, melted it and just drizzled a bit across the candy canes and then sprinkled them with the crushed candy canes - very delicious, but too time consuming at the last minute!

Candy Cane Chocolate Chunk Cookies

I'm baking these right now and know that I have a winning new Christmas cookie! They are delicious and very easy to make. I did make a few changes to the recipe: lowered the oven temp to 350 degrees, I had no candy bars so I used mini chocolate chips and I added a few drops of red food coloring. Also, somebody mentioned that they used wax paper, I think parchment paper will work better ... they didn't stick at all. I think when I put them out for company (if there are any left by Christmas Eve!) I'll dust them with powdered sugar. Thanks for a great recipe Loren!

Wild Rice Chowder

It was very easy to make, good flavor and it does help to add more chicken stock. I also added more chicken and it was a very hearty soup for our cold winter days, but it is less than appetizing to look at.
