Classic Rice Pilaf

I have been making rice this way for years and highly recommend it. The nice thing about this recipe (in addition to its excellent taste) is that it is very forgiving. It can stand for as long as 20-30 minutes out of the oven and still be warm if you keep it covered. In addition, you also free up a burner on your stove. Once you try this method, you may never go back to the old way. Enjoy!

Winter Fruit Salad with Lemon Poppyseed Dressing

I made this salad for a Christmas party and it was the hit of the evening. Everyone loved it, even the self-proclaimed "salad haters." I followed the recipe for the dressing exactly, but I found that I did not need to use it all. I used about 2/3 of it, and I think more would have been overkill. For the salad itself, I took the suggestions of other reviewers and did not peel either the apple or the pear. I tossed them in a bit of the dressing, and they did not discolor at all. For presentation, I used a large shallow bowl, layered the romaine, cranberries, cheese, and nuts, then arranged the diced apple and pear around the edges. It looked spectacular, and then I tossed it all together at the table. There was one tiny bit of lettuce left in the bowl at the end of the evening. I will definitely make this recipe again and again. It looks hard, but it is really pretty easy. Thanks for a great recipe!

Baked Denver Omelet

This recipe is excellent. It is basic enough for non-adventurous palates, and if you want to vary the flavor, it is easy to do so. Add herbs, potato, mushrooms, and/or small amounts of any vegetable you like. Enjoy!

Lemon Cream Pasta with Chicken

Rachel Dobbs is right. I do not mind reading little tweaks to a recipe, but I do not think you should rate a recipe unless you have made it as described. Then, if you like, make it again with your tweaks and tell us the result. But to totally reconfigure a recipe is not fair to the original cook. I have not made this recipe yet, but it sounds great, and I will make it just as indicated.

Spaghetti with Bacon

This is one of my "go to" recipes for a busy day. I like to reserve the bacon, crumble it, and serve it on top of the pasta with Parmesan cheese. You also may be able to get by with a bit less oil--experiment with the amount to your liking.

Pancakes I

This is an excellent basic recipe. You do not need to refrigerate it overnight--a few minutes to let it sit and allow the leavening to work is fine. As another reviewer said, do not stir it down when you make the pancakes, just scoop the batter out and into the frying pan. You can use the recipe as is or add your own touch--applesauce is good, especially if it is homemade. Chocolate chips work well for kids. And if you have leftover buttermilk, you can use that as well in place of the milk. Bon appetit!

Homemade Refrigerator Pickles

I found this pickle recipe last summer and made it many times using home-grown cucumbers, to rave reviews. It is incredibly simple, and the pickles taste great. I shared the recipe countless times. If you are looking for a foolproof, simple recipe, you just found it!
