Mexican Style Shredded Pork

This is really, really good. I can't believe how easy it was to make, and what a great flavor it had. We ate this as a rice bowl, it was better than anything similar we've had in restaurants. I followed the recipe as written, I was able to find the chipotle sauce, which I think does need to be included here -- gave it a nice kick and flavor. Can't say enough good things about this! :-)

Alison's Slow Cooker Vegetable Beef Soup

The can of crushed tomatoes didn't work well for me - it ended up giving the soup a heavy tomato base, which I wasn't expecting and didn't care for. If I made this again, I would use a can of diced tomatoes instead of the crushed, which I think would be much better.

Champagne Shrimp and Pasta

This was very good. I made it with scallops instead of shrimp and used a can of drained diced tomatoes instead of fresh. The canned tomatoes worked out fine (fresh would probably have been better, I know...but canned was all I had) - I just had to cook it a bit longer to reduce the liquid down than the recipe called for. Very nice meal, would be good for a special occassion.

Mom's Best Macaroni Salad

Sorry, this was way too sweet for our liking. I eliminated the white sugar and used less than 1/4 of the can of sweetened condensed milk, as other reviewers suggested, but it was still really sweet. I added some lemon juice for tartness, and that made it edible, but I would not make this again.

Beer Brats

Very tasty. We are not big meat eaters, but wanted something to do on the grill for a camping trip. These brats were perfect! The boiling in beer helped cook the fat out of them first, then they browned up really nicely on the grill. The onions had a great flavor. We'll make these again.

Terry's Texas Pinto Beans

Sorry to disagree with all the excellent reviews, but we thought these were only mediocre. I followed the recipe and didn't change anything. Next time I'd be more liberal with the spices, or try a different brand of green salsa to see if that makes the flavor pop any more.

Vegetarian Chickpea Sandwich Filling

Love this! Made it in my food processor which gave it a nice, creamy texture (but still coarser than a hummus). The lemon juice/dill is a nice combo with the chickpeas. Very fresh tasting. Will make this regularly.
