Yummy Sweet Potato Casserole

I made this for a work Christmas party and it was a hit! I followed some of the recommendations from other reviewers and baked the potatoes in the oven at 375 for 75 minutes before mashing them. I also used evaporated milk in place of regular milk and cooked it for about 10 minutes longer than called for. I had doubled the recipe and still backed it in a 9 x 13 baking dish so the amount of topping was perfect. I will be making this again for parties and holidays!

Ricotta Gnocchi

I gave this 4 stars but my husband gave it 5+ so we compromised at 5! I made the Gnocchi and sauce pretty much exactly as the recipe calls for. I added a generous "dash" of red pepper and it was plenty spicy which was perfect for us. If you're considering skipping the mozzarella in the sauce, don't! It adds a nice touch to the dish. I am not a very experienced cook so making the Gnocchi from scratch was a little intimidating. I rolled out the first rope as instructed but it made too big of a mess. For the rest I just dropped small balls onto a floured surface and rolled each around a little. One step I did add was to pan sear the Gnocchi once it was boiled (I'd had it prepared this way at a restaurant and wanted to try and recreate it). The pan searing added just a little firmness which we loved! Overall this is a keeper!

It's Chili by George!!

I made this chili last night for the first time and thought it was very good. I followed some of the other reviews and used diced tomatoes instead of the tomato juice. I also played around with spices and ended up adding about double of everything except the chili powder which I only added a little extra. I doubled the green pepper too just because I didn't want any left over but I don't think it made much of a difference. I served with elbow macaroni, cheddar cheese, and Fritos. We will be keeping this recipe in the fall/winter rotation!

Cheesy Tortilla Soup

Great soup! I followed the recipe pretty closely and it turned out very good. The only thing I did different was to use a lot more onion (I accidentally chopped too much and didn't want to waste it) and use Rotel in place of the canned tomatoes as another reviewer suggested. Both changes added a lot of flavor and gave it the perfect amount of heat. I have made this twice and both times turned out perfect!
