Baked Doughnuts

I really don't know why the complaints about them not tasting like 'donuts' and how they taste more like a muffin. I'm making the assumption that they were expecting a yeast donut taste. Well...these are CAKE donuts...you know...like the frosted sugar cake ones that you can buy. If you'll notice, there is NO YEAST! That being the case, I don't know why anyone would expect them to taste like a yeast donut.

Mom's Mashed Potato Salad

This is just like my 86-year old mama makes it. My family loves this. We don't specify the potato, but usually use the cured red potato. Sadly, all we can buy at our grocer is the small new red potatoes. So we've switched to the russets...going to try the Yucon Gold and see how that works. We also use chopped sour or dill pickles, substituting apple cider vinegar when we don't have any pickle juice. Pickle juice is preferred.

Jambalaya

oh my...this is wonderful. I tried to do 'as is' and did except I didn't have enough celery. I was doubling the recipe for company and only had 2 stalks (needed 4). So I used celery flakes for the rest of the celery. (1 tbsp celery flakes = 1 stalk celery, so says the 'net). I also kept the broth and rice separate because we never eat it all. I figure I can freeze the leftover sauce, making fresh rice for it at another meal. I served this to 7 guests today. I had few leftovers even after the doubling of the recipe. Great recipe!

Stephanie's Freezer Spaghetti Sauce

You don't have to add tomato paste to thicken it. just add cornstarch whisked with a little cold water...then drizzle the mixture into the hot mixture...it will thicken nicely. This way you don't have the canned tomato paste taste nor the expense of buying it.
