Coconut Macaroons III
Fast, easy, and super addictive! I've tried several other macaroon recipes and this one is my husband's favorite. It made two dozen ping pong ball sized cookies. Much easier than trying to whip egg whites to the perfect consistency. Stir, scoop, bake, that's it!

Easy Fruit Cobbler
I absolutely love this recipe. I make it with gluten free flour (King Arthur brand) and fresh granny smith apples about once a week. My husband likes to have extra apples on top, so I make it with apple chunks but I bake about two cups of apples separately then pile them on the individual servings after the cobbler is done. I do add quite a bit of cinnamon and a teaspoon of vanilla, but I put those in just about every baked good, so that's not a strike against the recipe. It takes all of ten minutes to mix the ingredients, melt the butter, and layer it into the dish. By the way, this doesn't require any xanthan gum if using the KA flour.

Pecan Pie V
BEST PIE EVER! For years, I used my ex-MIL's recipe, even though no one really liked it. This year, I wanted something different, and I loved the idea of not using corn syrup, since my husband's main complaint is that pecan pie is too sweet. Even though I made this without a crust (we're gluten free) and I used GF flour, it came out perfectly. This is so good heated and served with a blob of ice cream on top. I will never use any other recipe!
