Baby Back Ribs

The jury is open on this one... I had only had ribs a handful of times before but I remembered loving them. I didn't really like them from this recipe (I guess I prefer mine BBQ'ed?), **BUT** my boyfriend thought they were great and he said they came out as they were supposed to. So excuse my rating, it might just be personal preference.

Fluffy Pancakes

Yum! Never tried the sour milk trick so I was a little wary, but it worked great. You can also use buttermilk instead rather than souring milk if you have it on hand. These were fluffy with great texture and pretty simple to make.

Garlic Chicken

Great! Quick and easy week-night dinner (just whip up a pasta side and some veggies). My boyfriend and I both loved this, the olive oil gave it a nice crunch. It's key to warm the olive oil with the garlic! I just put mine in the microwave for 30 seconds or so. For a slightly healthier alternative, whip up two eggs with a few tablespoons of milk and dip chicken in that before coating in the bread crumbs.

Oatmeal Chocolate Coconut Chewy

THESE WERE AMAZING! When I told my boyfriend I was going to make oatmeal chocolate chip cookies, at first he was disappointed. He thinks I never make just plain ol' chocolate chip cookies, I always have to throw oats or peanut butter or something in there. Hey, I like to live on the edge! ;) He changed his mind when he got a taste! He loved them! Anyways, I halved the recipe since I was just making it for us two and I used a normal cookie scoop and it ended up making about a cookie sheet and a half worth when I spaced them an inch or so apart. THE ONLY CHANGES I MADE: No coconut, no walnuts. I also had read that they were too sweet, so I nixed the white sugar and added just a little bit more brown sugar. AMAZING COOKIES, SOFT, GREAT TEXTURE, TRY THEM!

Baked Garlic Parmesan Chicken

This chicken was great! I didn't follow the recipe exactly, just kind of borrowed the general idea. I used two cloves of garlic (we love garlic at my house). I also just kind of estimated the ratios of seasoned bread crumbs to the shaky Parmesan cheese. I cooked at 350 degrees for a little longer than recommended (they still looked pink to me). and MAN were they good! I usually use egg and milk to bread my chicken, and I'm sure olive oil is less healthy but it was so much crispier on the breading. Also, if you use 2 cloves, don't be scared by the overpowering scent of garlic that will be in your kitchen while these are cooking... the taste isn't overpowering at all, it's just right! I highly recommend this for an easy week night dinner idea.
