Chocolate Meringue Cookies

These turned out great. I had used yolks only to make a cake, and started looking around for a good meringue cookie so that I wouldn't waste the whites. I let the whites sit at room temp for a while before starting. I let the mixer do the work at medium until I got soft peaks, and proceeded as written. I used a small disher to drop onto the cookie sheet - definitely more than a teaspoonful! :-) Baked for 30 minutes and got dry, crisp outsides with just a little chewiness in the center. Very good!

Peppermint Cookies

I liked the peppermint blossom idea as well. I substituted 1/2 tsp peppermint extract for the crushed candies. I dropped balls of dough into a mini muffin pan, baked them for 8 minutes, and then pushed a Hershey candycane kiss (frozen so they don't melt so fast) into each one as soon as they came out of the oven. Really pretty and tasty, and something different since most of our other goodies are chocolate!

Apple-Stuffed Acorn Squash

I made some slight variations - used maple syrup instead of honey and added a dash of nutmeg. I mixed this with the chopped apples, filled the squash, and dotted the tops with butter. I also added a handful of chopped pecans. I was running short on time, so I put them in Pyrex dishes with a little water in the bottom and microwaved for 5 minutes before baking. My family looked askance at them ("this looks weird") when I served them with dinner, but after just one bite, they gobbled it up and said it was wonderful!

Sesame Pasta Chicken Salad

Great dressing - that's what makes this good. I marinated chicken in teriyaki sauce and grilled it before slicing into chunks. I also added some sliced snow peas and julienned carrots to the pasta in the last minute of boiling. Very nice!

Italian Pinwheel Rolls

Very easy - I used the dough hook on my Kitchenaid instead of kneading. The dough was soft and very pliable. I used fresh oregano and dried parsley, and brushed with melted butter when they were done. Everyone loved them!

Oatmeal Chocolate Coconut Chewy

Made these as written except: sub'd whole wheat flour for half the AP flour, and left out the nuts as I didn't have any on hand. I did put the batter in the fridge for an hour before baking and I always use a small disher and parchment paper when I bake these type cookies. They held their shape very well and they have a nice texture. Not overly sweet - just right!

Chicken and Red Bean Enchiladas

I took another reviewer's advice (fellow Floridian!) and used enchilada sauce instead of the tomato sauce and chicken broth. I subbed cheddar for half the pepper jack and used chili beans. Everyone wolfed it down!

Ninety Minute Cinnamon Rolls

This was easy and the rolls turned out great. I used the dough hook on my mixer to knead, and I doubled the cinnamon and added some pecans. The dough was very easy to work with. Made a cream cheese frosting as well, and everyone loved these.

Chicken Fajita Marinade

I added a little oregano and chili powder, about 1t of salt, and some pepper. Marinated for 5 hours or so and grilled the chicken. This turned out very well - will definitely make again. Thanks!

Squash Braid

I made this as-written except I substituted whole wheat flour for 1 c of the flour, and I used 'better for bread' all purpose flour. I thought it was very easy to put together and the loaf came out looking gorgeous.

Mom's Macaroni and Cheese

Great basic recipe. I used 2.5 cups of small shell pasta, added a teaspoon of dried mustard to the flour/butter, used 4 slices of American cheese instead of the Velveeta, and 2 cups of extra sharp cheddar. I also used crushed Townhouse crackers for the topping instead of the breadcrumbs/butter. Kids and adults scarfed it up!

Chicken Pot Pie IX

This is a very versatile basic recipe. I sauteed mushrooms, freshly cut corn kernels, and garlic along with the onion. I used chicken broth to cook the chicken and reserved that to add back in after draining. I did toss in a little extra flour and then added more broth and milk to reach the consistency I wanted, and I added some seasonings. I used frozen puff pastry dough on top, and everyone loved it!
