Al's Baked Swiss Steak
I made this exactly as written, except I didn't add the cheese. I would probably go a bit lighter on the oil the next time. Other than that, it was wonderful - the entire family loved it and asked me to make it again. Win!

Creamy Zucchini and Spinach Rigatoni
I used frozen chopped spinach instead of fresh - thawed and pressed out most of the water, and added it just before the flour. I also substituted white wine for about half the chicken broth, and added chopped cooked chicken. This was a HUGE hit with my family - including the two picky children - and everyone requested that I make it again.

Fruit Punch
Made this for a piano recital - it was really easy to take all the (pre-chilled) ingredients and pour them into the container on site. The only "trouble" was scooping the sherbet in, and that was really easy. It was all gone before we left.
