Old Fashioned Potato Cakes

Very good! No one had ever had them before, as I don't recall ever having leftover mashed potatoes before, and I wouldn't originally thought to make mashed potatoes just for potato pancakes. Everyone loved them and went back for seconds!

Asian Rainbow Trout

This recipe gets 5 stars because it is the recipe that got me to ENJOY trout, and not just choke it down. The kids liked it, the husband raved, and I basked in the glow! If you think you hate trout, give this recipe a try! I prepared as is this time, with no modifications. YUM!

Cheesy Acorn Squash

My daughter and I enjoyed this very much! It would make a nice meal all by itself, it is so filling! I doubled the recipe to feed my family of 5, and I added 2 Tbsp of a bacon seasoning blend in the hope that my husband would be more likely to eat it without judging too soon. It was not to be, he said there were too many onions, and my boys just don't appreciate this kind of thing yet. *Note that there are NOT too many onions. I will be making this again for my daughter and me.

Rice Casserole

This was a very good recipe - I had to substitute a mexican 4 cheese fiesta blend for the jack cheese, because that's what I had, but everything else was as written. Delicious and quick, good comfort type food, and I imagine it will be quite adaptable to a full meal once I have time to play around with tossing in some chicken or ham, or maybe some different veggies. This stays in my recipe box. :)

Kicked Up Baked Teriyaki Chicken

Very good on its own as a tame version! I like a little more tang, so I added 1tsp ginger paste instead of ground, someting equivalent to the juice from 2 limes (too lazy to measure) and a tbsp of Szechwan chili sauce. So good!!!

Very good! I recommend cutting back the salt, especially if using a salty cheese to make cheese sauce, but otherwise simple and very good!

Caramel Apple Pork Chops

The whole family loved the recipe - namely, the apples and sauce! My chops were very flavorful, but tough. Totally not the recipe's fault though! The sauce redeemed my poor choice in cut of meat. The only reason this didn't get 5 stars is that I had to double it to get just enough for each chop, and I only drizzled a TBSPish (used a soup spoon) on each serving. The package of meat I pulled out had 5 pork chops and that last one is lonely and sauceless,even with the doubled recipe. Make this with confidence, but double or triple the recipe!

Iced Pumpkin Cookies

I actually made these this past fall, more than once and they disappeared everytime! Made with the icing the first time, and without the other times. The icing is great, but the cookies can stand alone and are a reasonable snack after school without the icing. I am craving these even though it is still summer - I may just have to make a batch this week!

Napa Cabbage Salad

Excellent salad - a little too much oil for me, but easily fixed and probably just my weirdness. I did not have any sesame seeds, so I subbed a quarter teaspoon sesame oil on the crunchies and 2 tiny shakes in the dressing. A little goes a long way. My husband, who doesn't like raw cabbage, loved this, as did my 10 year old daughter. Jury's out on the 3 year old though! lol

Cranberry Pork Chops II

Fabulous! My husband is *very* picky - came into the kitchen looking warily at the cranberries - and he LOVED these! My daughter did too - ate two of them! Changed nothing - wonderful, wonderful, wonderful!

Golden Potato Soup

This is fantastic! I did double it for leftovers, and I used bacon bits instead of ham, as that's what I had. My family requested it the next night - a first for my dd, who usually only likes tomato soup. I will be making this frequently! I can't wait to experiment some more, maybe Cheddar cheese instead of American, or some grated carrot for added nutrition. Thanks forsaving dinner Marge!
