Simple Beef Short Ribs

Used a combination of chicken broth (odd I know, but had no beef brother) and HP Sauce. They came out tender and flavorful, and a breeze to make. Thanks!

Lemon Pie II

As indicated by other reviewers, this recipe tastes overwhelmingly like cream cheese rather than lemon. I used 1/2 cup of fresh lemon and plenty of zest, and still the cheese flavor was too strong. Furthermore, I beat the cream cheese- don't do this! Cream cheese gets grainy when overmixed, which I didn't know until I made this.

Lemon Garlic Tilapia

I was tempted by the ease of preparation and the small number of ingredients. I followed the suggestion of sauteeing the olive oil (which I used to replace the butter), garlic, spices, and lemon proir to sprinking, and also put salt, pepper, and parsley directly on the fish before that. Very nice complement to the flakiness of tilapia, but a tad too tart from the lemon. I would add more garlic and olive oil to balance it out. Update: Much better with butter than olive oil.

Homemade Wine Coolers

Almond Chicken Salad

I personally liked this salad (which is more of a meal than a side dish) but the others in the household thought it was a bit too busy. Nice crunch. I added mandarin orange segments for a bit of moisture and sweetness and they were a nice addition.

Squash Cookies

I made these with butternut squash and left out the nuts. These have a nice flavor and texture, with the consistency of muffin tops as other have mentioned. The next time I make them I will likely double the spices because I found the spiciness fairly mild.

Cappuccino Brownies

These were very good- and simple to make, so a great choice for a last minute potluck or gift. The coffee really enhances the flavor of the chocolate. These are rich and only for chocolate lovers!

Cajun Style Baked Sweet Potato

I have never liked the gooey sweetness of sweet potatoes served with marshmallows, so this spicy recipe piqued my interest. And it also satisfied. The potatoes were a nice combo of sweet and spicy, and the texture after 45 minutes was perfect. Thanks for this!

Cranberry, Sausage and Apple Stuffing

I made this for a bunch of people, even though I don't like stuffing myself. I substituted onions for leeks and left out the celery. I liked the colorful look of the finished product, and my eaters said it was a moist stuffing even without extra broth. Do not serve if you like a drier stuffing.

Slow Cooker Turkey Breast

I give this a mixed review because I think it requires butter, which the recipe does not stipulate. Otherwise, the turkey would be very very dry. Also, if you are using a boneless turkey breast, I recommend slicing the breast lengthwise as soon as possible to make for more tender pieces. If you follow this recipe as is, you will have a dry bird. A key component of slow cooking is plenty of liquid. I highly recommend following the suggestions offered below by other reviewers to generate more of it.

Best Ever Pie Crust

Like other reviewers this was my first attempt at pie crust. Besides some problems stemming from my lack of a rolling pin, this turned out fabulously. It actually tastes quite nice (I don't really like pie crust) and is basically idiot-proof. I would follow the suggestion of chilling all tools before beginning, it made everything easier.

Mustard Crusted Tilapia

Yumm this was good. I used regular mustard and HP Sauce instead of worcestire, and the flavor was still rich. My only suggestion is to double the recipe, even for 2 fillets. I had troubled spreading what there was.

Fruit Cobbler

This recipe was a FLOP!! 55 minutes meant a piece of burned crust with the consistency of rubber. It was edible, but that does not mean tasty in the least. Turned me off cobbler.

Easy Chicken Rice Casserole

I scaled this recipe down to 2 chicken breasts, which required about 55 minutes of baking. I would recommend increasing the soup, milk, and rice, as the chicken was really dominant. I added onion soup mix and fresh pepper for flavour, and would say this is the minimum in such a bland recipe.

Mom's Buttercream Frosting

I just used this frost a great cake, and though my husband liked it, I found it to be indeed a bit waxy and flavorless, even with extra vanilla. Perhaps it is better with chocolate... either way, it didn't taste like the buttercream frosting I have enjoyed in restaurants. In terms of modification, I used 1/4 cup shortening and 3/4 cup unsalted butter. I recommend being very patient with the flour-milk paste, which easily clumps if heated too quickly.

Ladyfinger Trifle

I loved this dessert, it was easy to make, with inexpensive ingredients, and not too rich after a big xmas dinner. Next time I would not slice the ladyfingers going around the trifle dish because they sagged sideways.
