Fluffy Pancakes

In pursuit of a thicker pancake than we seem to get from our household recipe book, we tried this out. My fiance ogled the batter apprenhensively, noting it looked more like muffin mix than pancake batter. These did not spread well but cooked through nicely. And they were fluffy as promised, but the taste, even with the added vanilla, was blah. Our search continues.

Honey Baked Chicken II

Yum! The balance of honey and mustard is perhaps a tad on the sweet side, but the consistency is perfect. I like the curry addition too.

Mom's Stovetop Pork Ribs

I made these because my fiancee bought pork riblets (despite the fact that I have no love for pork). It took longer than 25 minutes for the water to boil off, but once it did, the meat was tender. I substituted dry parsley for the fresh sprigs, and I had no bay leaves on hand. The flavor was still nice, and the pork-lover enjoyed the meal. It did not, however, change my mind about this kind of meat.

Baked Teriyaki Chicken

I love baked chicken recipes, and this one did the trick. The sauce was nice and it complimented the moistness of the chicken. Not too sticky either.

Cajun Style Baked Sweet Potato

I have never liked the gooey sweetness of sweet potatoes served with marshmallows, so this spicy recipe piqued my interest. And it also satisfied. The potatoes were a nice combo of sweet and spicy, and the texture after 45 minutes was perfect. Thanks for this!

Crispy Baked Chicken

I love chicken with a crispy skin, and this recipe offered that with a nice moisty inside. The smell was delicious, and the taste was quite nice. I used large chicken legs so the rolling was tricky but sprinkling worked perfectly.

Lemon Garlic Tilapia

I was tempted by the ease of preparation and the small number of ingredients. I followed the suggestion of sauteeing the olive oil (which I used to replace the butter), garlic, spices, and lemon proir to sprinking, and also put salt, pepper, and parsley directly on the fish before that. Very nice complement to the flakiness of tilapia, but a tad too tart from the lemon. I would add more garlic and olive oil to balance it out. Update: Much better with butter than olive oil.

Carrot Cake

This is a lovely flavor and texture, and the frosting is the perfect hit between sweet and creamy. My only criticism is that some spiciness would have been good- maybe the addition of ginger or nutmeg would do the trick.

Spicy Fish Soup

OK I am no expert so maybe the fact that the green chilis I used were pickled made a huge difference but this was waaaay toooo hot to eat. I added a full carton of yogurt and some white sugar and my mouth is still flaming. Before the insane heat hit me, I did like the flavor, but after four bites my eyes were watering and my boyfriend was begging for mercy. I will be avoiding spicy food for awhile.

Gourmet Chicken Pizza

Despite my doubts, this turned out really great. I used three cheese ranch, which was an added cheese kick. There were no green onions around so I used green pepper, which was delicious. Much better than the oven version.

Cappuccino Brownies

These were very good- and simple to make, so a great choice for a last minute potluck or gift. The coffee really enhances the flavor of the chocolate. These are rich and only for chocolate lovers!

Best Big, Fat, Chewy Chocolate Chip Cookie

A good bet. They stay fat, which is great. But I would reduce cooking time to 10-12 minutes, because the ones I baked for 15 were quite crispy, and I prefer my cookies soft and chewy. They did disappear very fast at a moving party, one person asked what I did to make them look so nice (they have a pretty look naturally).

Burrito Pie

I chose this because it really does make for a huge meal, perfect for a dinner party consisting of a few hungry alpha males. I substituted salsa for the taco sauce, which I couldn't find anywhere. It went over very well, although it certaintly wasn't spicy at all. It is, however, a great treat for meat lovers, and I received requests for the recipe.

Apple Crisp II

The apple and the crisp blend nicely. I found that the taste was a little bland... next time I will use more cinnamon and put it on the underside of the apples as well. The oats add a great crunch.

Scottley's Basic Yellow Cake

I'm afraid this recipe didn't turn out well at all- the cake tasted stale and dry an hour after it was baked, and it was quite hard. I wouldn't use this one again.

Pancakes I

I made these pancakes with chocolate chips for my boyfriend's birthday breakfast and he loved them! I had them without the chocolate and I thought they had a really delicious vanilla taste. Much better than boxed mix!

Double-Decker Fudge

Rich and not too sweet, the two layers of this fudge compliment each other nicely. A little tricky to make at the crucial moment of pouring, the work was worth it! They were the special treat in cookie trays sent out this year.
