Peanut Butter Bars I

Yum! I substituted the semisweet chips for dark chocolate, and it offsets the sweetness of the peanut butter mixture very well.

Buttermilk Chocolate Bread

Mediterranean Lemon Chicken

I cooked this at 400 degrees for 40 minutes, and doubled the sauce ingredients for four chicken legs. The only reason for not giving this recipe 5 stars is because I found the lemon flavor a tad overwhelming, and would either leave out the zest or reduce the juice next time.

Lemon Pie II

As indicated by other reviewers, this recipe tastes overwhelmingly like cream cheese rather than lemon. I used 1/2 cup of fresh lemon and plenty of zest, and still the cheese flavor was too strong. Furthermore, I beat the cream cheese- don't do this! Cream cheese gets grainy when overmixed, which I didn't know until I made this.

Simple Beef Short Ribs

Easy Chicken Rice Casserole

I scaled this recipe down to 2 chicken breasts, which required about 55 minutes of baking. I would recommend increasing the soup, milk, and rice, as the chicken was really dominant. I added onion soup mix and fresh pepper for flavour, and would say this is the minimum in such a bland recipe.

Oatmeal Craisin Cookies

Took only 11 minutes to bake, 12-14 minutes resulted in extremely crispy cookies. Overall, these are fine if you like crispy, thin cookies, not the right recipe if you like me seek big, chewy oatmeal cookies.

Fresh Blueberry Pie II

What a superb idea to use both fresh and cooked blueberries; with one you get the sweet syrupy goodness and the other provides the pop of freshness. Highly recommended with a dollab of whipped cream.

Roasted Garlic Cauliflower

Homesteader Cornbread

Pretty Chicken Marinade

Even without the liquid smoke (which doesn't seem to exist in Canadian supermarkets), this marinade was delicious. A little tangy, I might tone down the lemon juice next time.

To Die For Blueberry Muffins

Delicious! I substituted all the milk for buttermik and found I had about 2 times too much streusel in the end, so next time I will halve that. The blueberries did not sink to the bottom, and the muffins taste wholesome and not too sweet. Will make again.

Buttermilk Oatmeal Muffins

I followed the recipe nearly exactly except I did add the tsp of vanilla and cinnamon as some reviewers suggested. I didn't really taste these flavors or any other. While the muffin has a good texture and makes a nice base for butter or jam, it really does not have a flavor on its own.

Mom's Buttercream Frosting

I just used this frost a great cake, and though my husband liked it, I found it to be indeed a bit waxy and flavorless, even with extra vanilla. Perhaps it is better with chocolate... either way, it didn't taste like the buttercream frosting I have enjoyed in restaurants. In terms of modification, I used 1/4 cup shortening and 3/4 cup unsalted butter. I recommend being very patient with the flour-milk paste, which easily clumps if heated too quickly.

Dark Chocolate Cake I

Fantastic! A dark but airy chocolate cake that tastes delicious. I followed the recipe but also did as one reviewer suggested and separated the eggs, whipping the whiites separately with some of the sugar. In a large Bundt pan the recipe took over an hour to cook, but came out lovely for a birthday cake. Thanks for the recipe!

Baked Mashed Potatoes

Wonderful update on boring old mashed potatoes. The cream cheese makes for a nice subtle cheesy flavor, and the baking gives the dish a lovely crisp top. Thanks for the recipe!
