Jamie's Cranberry Spinach Salad

Reviewed: Dec. 17, 2014
Well, nobody "raved" about this. In fact, out of 10 dinner guests, no one even commented on it, but it was well eaten. I thought it was good but I have had better salads, so this fell short of a 5 star. I would not make this again simply because there are better ones out there. If you plan to try this, one suggestion I would strongly make is not to toast the slivered almonds in butter. Once they cooled and were on the cold salad, they were greasy because the butter had solidified. If I were going to make this salad again, I would definitely toast the almonds the dry method way like I always do.

Pancake Casserole

Reviewed: Nov. 17, 2014
My husband and I thought this was pretty good, but certainly not a 5-star. There was something about it that is a little off. It is basically a cake with some cheese and bacon on top. The word "casserole" in the name threw me off a little. It is not what I consider a casserole. If I were to make it again, I would leave the cheese off of the top. The crumbled bacon is a good flavor with maple syrup, but cheese is just weird with syrup. This was a trial run to decide whether to make this in the cabin for Thanksgiving breakfast with our family, and I am not feeling real confident about it.

Easy Ice Cream Cake

Reviewed: Oct. 27, 2014
I am giving this recipe 4 stars because the grandchildren loved it. But, honestly, to me it just tasted like a dish full of ice cream sandwiches.

Cheesy Baked Eggs

Reviewed: Mar. 22, 2014
Wow! Delicious and easy...killer combination! I made it according to the recipe except that I added a small can of drained diced green chilies. Other than that, I wouldn't change a thing. It was one of those breakfast-for-dinner meals, and I served it with fresh fruit. This one is a keeper.

Juicy Fruit Salad

Reviewed: Jun. 8, 2013
I really liked this salad with its fresh and not overly sweet flavor. I made it exactly as the recipe called for except I used red grapes instead of green to add a touch of color. I, too, was a little confused about the reserved orange juice, so what I did was use two oranges...one for the segments in the salad and one just for the juice. The only reason I didn't give this recipe 5 stars is because by the second day the bananas had started to brown a little and get mushy. It didn't affect the taste, but if I was making it for guests, I think I would skip the banana. Either that or serve it immediately rather than letting it marinate over night.

Simple Scones

Reviewed: Nov. 19, 2012
I made this recipe with the orange zest and dried cranberries. They are delicious, and I will make them again. However, I will change up the prep method. I usually try to follow a recipe exactly the first time, which is what I did here. But I do not like grating anything on a box grater, and frozen butter is no exception. And trying to mix the butter into the dry ingredients with my hands was a total mess. So terribly sticky that a large portion of the dough stuck to my fingers. In desperation, I sprayed a little Pam on my hands, and I was finally able to get a ball formed. From that point on, everything went smoothly. The next time I make this recipe, I will skip the grating with a box grater and mixing with my fingers. Instead, I will follow other reviewers suggestions to use my stand mixer or food processor.

Southern Pimento Cheese

Reviewed: Oct. 15, 2012
Delicious! Made exactly according to the recipe, including the addition of worcestershire and dry mustard that the OP added to the recipe. Next time I will beat it a little less because it was a little too smooth...I like my pimento cheese slightly chunky.

Sweet and Spicy Almonds

Reviewed: Oct. 15, 2012
I made this exactly as the recipe called for. They were delicious...just the right amount of sweetness and heat. They were a little sticky, but not enough to keep them from being a 5-star.

Chicken Pot Pie IX

Reviewed: Jul. 31, 2012
I made this exactly as the recipe directed, including the oven temp and cooking time, except for one small detail. I took the advice of previous reviewers and cooked the chicken, peas, carrots, and celery in chicken broth. Then I drained and kept 1 3/4 cups of the broth to make the sauce. This recipe was delicious. Will make again. Next time I will lightly spray the pie plate with cooking spray before adding the crust, because it stuck a little this time.

Sesame Pasta Chicken Salad

Reviewed: Jun. 22, 2012
Very good. I made it exactly as the recipe instructed except that I reduced the oil to 1/3 cup since so many reviewers recommended that. I felt like there wasn't enough dressing when I was ready to serve it, so I whipped up another batch of the dressing and added half of it to the salad. I would caution you about toasting the sesame seeds. I felt like medium high heat was too high, at least on my gas range. Even though I stirred constantly, the seeds almost burned. I would recommend medium heat at the most...maybe even medium low. This is a good salad, and I plan to make it again. With the extra dressing, this salad would probably be a 5 star.

Sam's Famous Carrot Cake

Reviewed: Apr. 8, 2012
Delicious! Two people at our Easter dinner said it was the best carrot cake they have ever eaten. I followed the recipe exactly except that I baked it in two round pans to make a layer cake. I frosted with cream cheese frosting, like everyone else. This will be my go-to carrot cake recipe, but I think next time I will try it without the raisins.

Brussels Sprouts Gratin

Reviewed: Mar. 27, 2012
My store didn't have either fresh or frozen brussels sprouts, and I had my heart set on trying this recipe, so I used broccoli in place of brussels sprouts. It was delicious. My husband wants me to make it this way in the future, but I like brussels sprouts even more than broccoli, so I can't wait to try it that way. Other than the broccoli, I made it exactly as the recipe called for. UPDATE: I made this for Easter using Brussels sprouts. It was sooo delicious. I doubled the bacon and mixed half of it in with the Brussels sprouts and sprinkled the other half to top of the bread crumbs and parmesan.

Mini Crescent Dogs

Reviewed: Feb. 6, 2012
Easy to make and very good. Exactly what it claims to be. I only took out a couple of triangles of dough at a time to work with, putting the remaining in the freezer. The colder the dough, the easier it is to work with. I used a pizza cutter to slice the dough, as other reviewers suggested. I did turn the oven temp down from 375 to 350, since some people had a problem with the crescent rolls getting too brown. I lined the baking sheet with parchment paper and baked for 8 minutes, then rotated the cookie sheet and baked for 8 more minutes. Came out perfect. Served with honey mustard sauce on this website, as other reviewers recommended.

Delilah's Frosted Cut-Out Sugar Cookies

Reviewed: Dec. 14, 2011
I made this cookie exactly as the recipe called for. The dough would have been hard to roll out, as some other reviewers said, except that I rolled it between two sheets of parchment paper, and that helped. But it was very difficult to lift the dough up off the paper onto the cookie sheet because the dough was so soft and flimsy. I would have just placed the parchment paper, cookies and all, onto the cookie sheet, except that I had cut the cookies too close together. As a result, the cookies got stretched out of shape somewhat in the transfer, and some actually tore apart. I will say that the cookies held their shape (such as it was) during baking more than some other recipes I have tried. I also agree with some other reviewers that the cookies were a little bland, but I actually prefer a less sweet cookie, so I thought these tasted pretty good. The icing did not work out for me the way the recipe is written. It took lots more milk to get the right consistency, but other than that, the icing was a winner. It even worked to glue back together a broken cookie. It baffles me how we can all try the same recipe and our experiences turn out so differently, but mine was such that I won't use this recipe again.

No Bakes

Reviewed: Oct. 5, 2011
These are awesome! Taste just like I remember the ones from the school cafeteria over 40 years ago. I followed the recipe exactly. I used my hands to mix the oats and peanut butter because I wasn't getting anywhere with that wooden spoon. I can't imagine someone thinking they were dry, because they are not at all. Neither are they too sweet, IMHO.
