Cheesy Baked Eggs
Wow! Delicious and easy...killer combination! I made it according to the recipe except that I added a small can of drained diced green chilies. Other than that, I wouldn't change a thing. It was one of those breakfast-for-dinner meals, and I served it with fresh fruit. This one is a keeper.

Juicy Fruit Salad
I really liked this salad with its fresh and not overly sweet flavor. I made it exactly as the recipe called for except I used red grapes instead of green to add a touch of color. I, too, was a little confused about the reserved orange juice, so what I did was use two oranges...one for the segments in the salad and one just for the juice. The only reason I didn't give this recipe 5 stars is because by the second day the bananas had started to brown a little and get mushy. It didn't affect the taste, but if I was making it for guests, I think I would skip the banana. Either that or serve it immediately rather than letting it marinate over night.

Simple Scones
I made this recipe with the orange zest and dried cranberries. They are delicious, and I will make them again. However, I will change up the prep method. I usually try to follow a recipe exactly the first time, which is what I did here. But I do not like grating anything on a box grater, and frozen butter is no exception. And trying to mix the butter into the dry ingredients with my hands was a total mess. So terribly sticky that a large portion of the dough stuck to my fingers. In desperation, I sprayed a little Pam on my hands, and I was finally able to get a ball formed. From that point on, everything went smoothly. The next time I make this recipe, I will skip the grating with a box grater and mixing with my fingers. Instead, I will follow other reviewers suggestions to use my stand mixer or food processor.
