Prosciutto Wrapped Melon Balls

I love this recipe. It's easy and feels gourmet. I don't even use a melon baller. I just cut out pieces of melon, sprinkle with lime juice, wrap with prosciutto and then put a small mint leaf under and secure with a toothpick. I may try to slice the melon thin and make it a roll one time.

I've used a similar recipe before and it's great. The difference was to melt the chips over a double boiler so they don't burn. But if combine everything first it should be fine at 50% power. Last time I split it into 3 parts by using foil and made plain, walnut and stirred peanut butter swirls into the last one.
