Swedish Meatballs II

I only made the meatballs - and placed them in another sauce recipe. However, my meatballs completely fell apart. I even added 2 eggs instead of one. It obviously was down to the milk/bread crumb mixture as I've never had that happen. Very disappointing.

I usually avoid recipes with condensed soups - and was weary that this used TWO cans. But the salt levels were fine. What I was surprised at what there was no depth of flavor. Definitely something missing.

Lemon Coconut Squares

I followed the recipe as stated, and while we did like these they weren't what I expected. Given the amount of lemon juice, I was expecting a nice tart flavor to contrast with the coconut. However, they turned out more like a coconut custard bar. In fact some people I served them to said they would never know that lemon juice was even in the recipe. So flavor wise they were very nice, hence only 4 stars.

Sky High Yorkshire Pudding

Be sure to have the grease piping hot - I didn't and some came out like hockey pucks. Otherwise fab recipe.

Banana Sour Cream Bread

I make banana bread a lot, but since I had sour cream I thought I'd try this. I didn't care for the texture and actually found the flavor a bit flat.

Chicken Pot Pie IX

Some of the best recipes are simple ones, and this is the case here. I adore this recipe. It is flavorful and hearty and quick too. I especially like making this when I have leftover roasted chicken. On occasion I also use puff pastry instead of the pie crust. Simply lay a piece over my casserole dish and it puffs up beautifully.

Fruited Curry Chicken Salad

I've been making this ever since living in England, because they have a very similar dish called coronation chicken. I do a few things different to make a great restaurant-quality sandwich: I follow this recipe except I use standard raisins, and add 2 tablespoons of honey to the curry/mayo mixture. Top with shredded carrot and alfalfa sprouts on a nice think sliced whole wheat or other grain bread and viola! My husband always feels like he's ordered lunch from a cafe when he gets this in his bento.

Carnitas Filling

I did this in the slow cooker and it came out nice. We found that if we sauted the meat with onions after it was done cooking it gave the meat a nice crispy texture that complemented the depth of flavor.

Red Velvet Cake III

These were good. Let me clarify, the cake was fine. The icing on the other hand was a huge flop and I only barely saved it with some additions. I should have taken heed of the thinly-veiled warnings when everyone who gave it 5 stars used their own frosting recipe. If you want to basically top the cupcake with pudding, then by all meals follow the recipe.

Allie's Delicious Macaroni and Cheese

Wow - this was super easy AND delicious. What I loved about this recipe is that it can be made as is and served as a creamy style mac n cheese, or can also be baked and be more set. We loved it both ways. I also threw in some crumbled bacon and it took it to a new level of yummy complexity. I really think the mustard is key - it seems to amplify all of the flavors. Make this!!

Slow Cooker Mashed Potatoes

These were excellent. I consider myself an accomplished cook but I always seem to have watery mashed potatoes. This recipe not only helped me out in the chaos of Thanksgiving day cooking, but also resulted in the most lovely creamy and fluffy potatoes. I did double the recipe but found I needed about 1 cup of milk to make them less stiff. Also did the towel trick others suggested and that worked brilliantly.

Oil Pie Crust

This worked out really well for my Thanksgiving pies. It was slightly dry but we rolled between waxed paper and it was easier to work with. Nice flaky crust and my favorite part, its cheaper to make then standard pie crusts.

Yummy Sweet Potato Casserole

This recipe is quite easily the star of my Thanksgiving repertoire. I have to double the recipe and it still disappears. It actually bakes up into a light and fluffy sweet potato mixture, which is beautifully offset by the crunchy streusel. It killed my mom that we had to axe the old marshmellow/yam dish, but once we tasted this we have never missed candied yams. Thank you!!

Red Wine Braised Short Ribs with Smashed Fall Vegetables

This is an excellent recipe and one my husband asks me to make very often. The only things I do different are that I omit the red wine and sub beef stock for it. This is good for anyone who finds it too acidic, and you are not missing any flavor by doing this. I also dice the onion, carrot and celery rather than large chunks. Lastly, if I happen to have some available, I use bacon fat to saute those veg in first. Just gives it another layer of complexity and richness.

Teriyaki Sauce
