Key West Chicken

The honey in this recipe predisposes 'burning' of the poultry and a mess on the grill. Moderate cooking temperature and careful watching are critical to the success of this recipe. Mine did not turn out so well, and I won't be trying it again.

Amazing Ribs

I continue to be amazed with the disparity between the reviews and the end result of recipes on this site. I slow-baked the ribs, covered, in a low-temp oven, used country-style ribs (which should have made no difference in taste), Jack Daniels BBQ Sauce, Budweiser Beer and followed directions. Although I cannot find the right word to describe the taste, the ribs looked good but ended up not being eaten.

Broccoli and Cauliflower Casserole

Since I was taking this to my neighbor's for Thanksgiving, I read through all reviews and implemented 'common' changes. I measured meticulously. I sauteed 1/2 onion and 1 clove garlic in 2T butter, steamed the broccoli and cauliflower, heated equal parts of processed and cheddar cheeses in 1 can cream of chicken soup and the milk. I used 3/4 cup white rice and 1/4 cup wild rice, which I cooked in my rice cooker and used chicken stock instead of water. I used lightly buttered Ritz cracker crumbs on the top. I did not care for this recipe at all and neither did anyone else. I brought 3/4 of it home. I re-heated and tried it the day after Thanksgiving and ended up throwing it out. IF I made it again, and I don't plan to, I would use cream of mushroom soup and omit the onion and garlic. I would probably use stove top stuffing croutons with flavor packet and a little melted butter on the top. I don't believe the flavor of the cream of chicken soup, cheese, onion and garlic were a good combination.

Tender Italian Baked Chicken

Since I live alone, I chose not to "dip" the chicken pieces. I rinsed and dried pieces with a paper towel (necessary for mayonnaise to adhere to raw chicken), spread the mayonnaise on with a knife, and sprinkled the remaining ingredients. I lined the baking pan with foil. The thing I liked about the recipe is that I could easily make adjustment for one serving. I think it may be better with a other seasonings, however, I probably won't be making it again.
