Crispy Fried Chicken

This was the most moist fried chicken I've ever made! The method is what I needed to learn. I double dipped the pieces so it took a while for the coating to get to the right texture. The next time I might try using a cracker crumb coating for a different texture although good old flour is the favorite standby.

Orange Curried Chicken

I got the comment - "You have to make this again!" from my kids, so I know it was a hit. I used cooked frozen skinless chicken breasts which I thawed first in a pan until they were almost cooked through. Then I baked them with the sauce for only 30 min. so not to dry out. I took the advice to replace the water and salt with soy sauce and served with white rice. Thanks for an easy meal that is so good!

Banana Banana Bread

Vegetable Dip

This was a big hit, and so attractive in a decorative bowl - everyone wanted the recipe. This will become one my my staple veggie dips because it's different than the standard ranch dip and just as easy.

Cream of Fresh Asparagus Soup II

I made this a few months ago and it was so wonderful and fresh! I didn't change a thing and will be serving for Easter dinner since I can prepare the asparagus puree the day before and finish the soup just before serving.

Monte Cristo Sandwich - the Real One

I thought this was pretty good, but the batter needed something...(besides the baking power which I forgot!). I served with some strawberry jam mixed with cream. I think I'll add a pinch of cinnamon and a little vanilla next time. However, my finicky eater asked me to make these again (which should automatically warrant five stars) and floored me when she even suggested I serve to the kids for snacking at Easter dinner.

Dill Dip III

I've been looking for a dill dip or sauce I've had at a restaurant served with chilled asparagus. This isn't quite it but was good, if a little bland. I added some garlic and replaced some of the sour cream with plain yogurt to make a thinner consistency. I'll keep tinkering with this one!

Husband's Delight

This was just ok, a little too rich. I jazzed it up with some spice, and cooked in layers as the recipe said, then mixed before stirring. I think the orange color may have put us off. I probably won't make this again, since I have more to try.

American Lasagna

This was just okay, not the best I've made. I thought it was bland, but I did have plenty of sauce. I think I'll stick with my old recipe.
