Black Olive and Rosemary Focaccia

This is one of my favorites! Very easy to make and I have made it several times. I honestly don't notice a single difference with or without the olives, except color - so i just stopped adding olives. Super easy to make just as written and comes out great every time.

Spinach Tomato Tortellini

I was looking to change it up a little bit for dinner and this did the trick! It was very filling. I used meat tortellini to get some protein out of the meal and used more than double the amount of spinach the recipe called for. While it was good, it was also bland. Some cayenne pepper and a little more salt did the trick. Served it with heated up Italian bread for dipping in the extra sauce I made. Will make this again.

Chicken Enchiladas V

We normally eat enchiladas with red sauce so I wasn't sure how this would taste with cream of chicken soup. I made it very close to the recipe, except I used taco seasoning on the shredded chicken, and added 3/4 of a can of diced tomatoes w/green chillies. It was very good, my family loved them. I thought they were very good, but boy are they "heavy". Definitely more of a comfort food that is very high in fat.

Quick Pasta Carbonara

Turned out very good! I added onions and garlic to the bacon and used more bacon, then deglazed the pan with wine before adding in the milk and cream cheese. The cream cheese was lumpy and never did fully melt. An immersion blender would have been great for this. Still was very delicious, but quite "heavy", definitely not a guilt free dinner.

Garlic Chicken

This was great! I never follow recipes, I just read the recipe and all the reviews and then eyeball it. I used minced garlic from the jar and added romano cheese in with the parmesan along with salt & pepper & garlic powder. I also pounded the chicken, because the breasts I used were very thick. The chicken was moist and juicy.

Lithuanian Kugelis

I am Lithuanian, both my grandparents came from Lithuania and my grandmother would make this for every Thanksgiving and Christmas since I was a little girl. It was something I very much looked forward too, but every time I asked for the recipe she said she didn't have one and did a little something different every time. Now that she is almost 90, I wanted to make this for her for Christmas. I don't really follow recipes to the exact (that's just how I cook) so I probably used more bacon and more butter than the recipe called for, but it was excellent and everyone loved it!!!! The only thing I noticed different from my grandmothers version is I used a food processor to shred the potatoes and that gave them a different consistency in the finished product than when she would hand shred them (to a mush like consistency). Also, I did make sure to squeeze out the excess water as many other's have suggested.

Delicious Ham and Potato Soup

I have made this several times and it is super easy and tastes amazing! I always double the recipe (actually, I eyeball everything). This last time, I added some diced carrots for color. I think next time I might add some asparagus and corn and make it a chowder. Served with warm crusty bread for dipping. Also tastes great with some cheddar cheese and bacon bits tossed in just before serving! I agree with another reviewer, this does not freeze well.

Loaded Baked Potato Casserole

I wanted a complete meal, so I added corn and diced chicken (pre-cooked). I also used Cream of Chicken soup instead and omitted the bacon. It was great, everyone loved it. I only gave it 4 stars because it is just such a "heavy" dinner. I doubled the recipe and have an extra casserole in the freezer.

Cheese-Stuffed Giant Meatballs

I used this recipe as a base and tweaked it. I add finely chopped green pepper, onion, and garlic to the meat, along with other spices like salt, pepper, oregano. I use 1/2 pasta sauce and 1/2 ketchup, 2 eggs and 2 pounds of beef. It yields about 20 mini-loafs. I freeze what we don't eat and then it is super easy to thaw and re-heat them individually when you are looking for something quick. They always turn out very moist and flavorful!!

Baked Zucchini Chips

These were fantastic! I broiled for the last 3 mi utes to get them nice and crispy. I used Italian seasoned breadcrumbs and cut the zucchini thin. Great with ranch dressing!

Stuffed Peppers

This was very good! I blanched the peppers in boiling water first which reduced my cooking time to 30 minutes. I also used only an 8oz can of tomato sauce and about a cup of pasta sauce. I baked a separate dish of just the stuffing mix, because I knew my kids wouldn't eat the peppers. Topped with motzerella cheese and cooked for 5 additional minutes.

Chicken Piccata with Angel Hair Pasta

This took a long time to make and was a lot of work. I followed the directions, but because so many reviews said the sauce was too sour, I doubled the batch increasing the wine and the chicken broth but not the lemon or capers. I used fresh squeezed lemon juice. While my husband loved it, my two older kids wouldn't eat it and I ate it only because it was so much work to make, but it was so sour I had to sip water between each bite. Just way to sour. I think this recipe would be good with just a squeeze of lemon as the capers are sour enough. Will not be making this one again.

Shredded Turkey Barbecue

Very simple dinner to make. I used chicken breasts instead of turkey. I was weary of the combo with baked beans, but couldn't believe how similar it was to a pulled pork sandwich. Kids loved it too! I felt it was a bit too sweet for my taste, but that could just be from the BBQ sauce I used.

Amy's Barbecue Chicken Salad

Great simple recipe! I cube the chicken first and then cook it adding some taco seasoning and letting the chicken simmer for 10 min. I use crunched up tortilla chips instead of the fried onions, and I also add avacodo. My entire family loves this!

Simple Salisbury Steaks

Super easy recipe my family really liked. I added a can of milk to the soup for extra gravy. I also added an onion soup seasoning packet 1/2 to the gravy and 1/2 to the meat mixture along with garlic.

Taco Casserole

Simple and tasty meal that the kids loved. I added a can of black beans and some corn to the meat. I did not use tomato soup, instead I added a can of diced tomatos with green chillies and 1/4 cup of salsa. Served with jalapeños and sour cream. It will be one of those dishes I make to freeze ahead for a quick and easy meal.

Sizzling Southwest Burgers

This was fantastic! The only thing I did different was top with avacodo and lettuce along with the sour cream and salsa. My husband ate two of them, and on the second one I used a large scoop of avacodo, which he said helped cut down on the strong taco flavor. This would also be good if you add black beans to the mixture!

Southwest Corn Salad

This was fantastic! I used Elbow Macaroni noodles instead and omitted the onion and green chillies. Because I did not have any on hand. I used frozen corn instead of canned and used Cayanne pepper. I did not seed the tomato as there was no reason to do so and I added some cucumber based on others recommendations. I served it along side Southwest burgers and the entire family loved it!
