Parmesan Crusted Tilapia Fillets

I have been making a very similar recipe to this for several years. Since we are not carb sensitive I do add a mixture of Panko bread crumbs and Italian breadcrumbs. And a wonderful tip is to add an envelope of dry Italian dressing mix to the cheese and breadcrumb mixture!! It enhances the flavor over the top! I also sauté my dredged fish filets (and any mild white fish works) in a little oil to brown the crust. Then I place them on an aluminum foil line cookie sheet in a 325-350 oven to finish cooking. Really delicious! And healthy! Thank you for this great recipe!!

Roquefort Pear Salad

I made this salad this evening for myself, my husband, and adult son for dinner. It was absolutely delicious!! My son ate 3 servings of this salad and my husband and I ate 2 servings!! The combination of flavors is perfection!! Use any kind of leafy green you have on hand and it will work wonderfully!! I used a bag of romaine lettuce. I substituted crumbled feta cheese for blue cheese because that is what I had on hand. I also substituted diced shallot for the onion/garlic because that is what I had on hand. Along with others I think the dressing needs to be doubled (all but the olive oil-keep it at 1/3 cup). I used Dijon mustard which was delicious!! The candied pecans add so much textural flavor along with the sweet pear!! I added a handful of dried cranberries to my personal salad bowl and it was decish!! My husband and son raved over this salad!! And it is healthy too as well as yummy!! Highly recommend! Thank you for submitting this wonderful recipe!! I will be making it again often in the future!!

Super-Delicious Zuppa Toscana

This is a truly delicious soup just the way it is written! I wanted to make it even more hearty and filling for a very cold November night here in Georgia (Polar Vortex)!! I made the base recipe and then added carrots, orzo, and a can of creamed corn. I added a cup of skim milk and a cup of fat free half and half with a slurry of cornstarch to thicken into more of a chowder. Thanks for sharing your great recipe!

Easy Cheese Ball II

I used (1) 8 oz block of cream cheese & (1) 8 oz container of chive and onion flavored cream cheese-this added some great flavor!! Blended them together thoroughly. Added only (1) rounded tablespoon of dry ranch dressing mix--not entire package. Added finely grated sharp cheddar cheese to taste. Also had some finely grated Parmesan cheese so added some of that also. No measurements- just eyeballed it. Added a splash of Worstershire sauce and about (1/2) teaspoon of garlic powder. Mixed thoroughly. Formed (2) cheese balls from this mixture and chilled for about 2 hours. I toasted my pecans then chopped them. After the cheese balls had chilled, then rolled in chopped pecans. Very tasty and pretty!! Giving one as a Christmas gift.

Chocolate Chip Oatmeal Muffins

I made these muffins today to freeze for my grandkids' upcoming visit. I didn't have any rolled oats in the pantry but I did have a single serving envelope of Quaker Peaches n Cream instant oatmeal so I decided to use that instead. I added about 6 to 7 ounces of unsweetened applesauce and a handful of chocolate chips. I also cut back on the butter to 5 tablespoons. I added a splash of vanilla and several dashes of cinnamon. I cut the brown sugar back to 1/2 cup. Upon reading other reviews I upped the baking powder to 1.5 tsp. I got 9 paper liners 3/4 full and baked around 15-17 minutes. Tested doneness by inserting toothpick in the center of several muffins and they were done. These are very moist, flavorful, and not crumbly at all. Delicious flavor. This recipe seems very amenable to adding/varying ingredients. Thanks for helping me provide my grandchildren delicious and healthful muffins!
