Roasted Asparagus with Balsamic Vinegar

I gave this 5 stars for ease of preparation and great taste. I dusted it with a little garlic powder, and sprayed it with olive oil rather than drizzle the oil. Everyone at the table had seconds and there was none left at the end of the meal. Thanks for the great & simple recipe!

Mediterranean Chop Salad

I served this salad with our Christmas Eve dinner & the colors worked perfectly for the holidays. It was gorgeous with the well-placed croutons & cheese on their individual bowls. And besides the presentation, it was just plain delish. With 11 guests, including 3 kids, only 1 bowl came back to the kitchen with anything left in it. That's pretty impressive!

Mashed Sweet Potatoes

Very simple & tasty. I used light butter and sugar free syrup and they're still delicious. Got lots of compliments when I served them as a side to ham at a recent football game.

Amish Breakfast Casserole

For several years, I have been searching for just the right breakfast casserole recipe for Christmas morning, and THIS IS IT. It was the first thing gone on the breakfast table, and they liked it so well, we made it the following morning, too!! I had to bake it a little longer than indicated - I think I had it in the oven for about 55 minutes - you can tell when it's ready (it won't jiggle in the middle). Other than that, we followed the recipe to a T and it was wonderful!

Egg and Hash Brown Pie

This is an excellent dish to prepare ahead of time & then pop in the oven for breakfast as we did on Christmas morning. There wasn't a bite of it left! I browned the hash browns before putting the casserole together, even though it didn't specifically say to do that. I think next time I may line the bottom with crispy crowns instead. It's a keeper and may well become part of a Christmas breakfast tradition. Thanks for the yummy, easy recipe!

Fruit Salad in Seconds

This is an excellent, quick fruit salad. I, too, added cool whip (1:1 ratio w/yogurt). And as others have mentioned, it doeesn't sit well for very long (it gets runny and the bananas turn). However, with that said, it was a favorite for Christmas morning breakfast, and with the red strawberries, green grapes and yellow bananas, the colors couldn't have been more festive. Thanks for the great recipe - we'll have this again, I'm sure!

Bodacious Broccoli Salad

I have made this recipe several times. I try to keep it a bit healthier with turkey bacon, Splenda and light mayo, and it is still delicious. When I take it to picnics & so forth, I never have any leftovers to bring home.

Snickerdoodles II

Yummy, yummy. Crispy AND chewy. Just right! I followed the suggestions to bake for only 8 minutes, and to use 3T sugar & 3t cinnamon for the coating, and they turned out perfect. Thanks for the great recipe.

Cranberry Orange Oatmeal Cookies

I made these for the first time today & they were a hit. My husband dislikes oatmeal cookies & doesn't care for cranberries, either. But he liked these well enough to help himself to 3 of them. I also found them to be tasty & a nice change from oatmeal raisin cookies. The only modification I made was using 1T undiluted orange juice concentrate in place of the orange extract because that was all I had on hand. I wouldn't recommend this, but it worked in a pinch.

Pumpkin Roll I

Truly outstanding. My mom had seconds on desert for the first time EVER! Superb. Sweet, but not too sweet. Very easy to make - just remember to be very generous with the confectioner's sugar when you dust your dishtowels. Only thing I changed was I omitted the pecans as my family isn't much into nuts in their baked goods. And I might try a pinch of clove next time, since I'm used to that in my pumpkin concoctions. Really, really excellent recipe. THANKS!

Calico Beans

I really like this recipe as a change of pace from the tomato based baked beans we're all so familiar with. I have made these twice now. I substituted Northern beans for the limas, mostly for color, and also because I know limas often get a mixed reception. I also used light & dark kidney beans instead of the poke & beans. The first time I made these, I put them in a slow cooker & they ended up getting a bit starchy. The second time I baked them & served them right away. They turned out much better. This is a recipe you can play with & get different results each time.

Twenty Four Hour Layered Salad

I made this salad, with a few variations, for our 4th of July picnic. Unfortunately, there was so much great food, the salad barely got touched. Those that did try it liked it a lot...The good news for me is since there was so much left, I have been enjoying it for several days now, finally hitting the bottom of the dish 5 days later! And the marvel is, it's stayed fresh all this time!!! When I made it, I omitted the mushrooms and instead added broccoli flourets. I also used a whole head of iceberg because the spinach at the store looked dreadful.The dressing is simple, but compliments this salad well. I used sugar this time, but I think in the future I'll subsitiute with Splenda. I will definitely make this again, and I will cut down on the peas, too. I thought they were a bit overpowering. All in all, a wonderfully tasty salad that lasts for days.

Little Broccoli Bites

I have tweeked the recipe just a bit - instead of the poultry seasoning & parsley, I use crushed herb stuffing. Either way it's a great recipe & I always get requests for the recipe when I serve them at a get-together.

Chicken a la King I

This is a keeper. I added 1 cup of peas as well, and it turned out great. I served it over Eggo waffles (chicken & waffles is a local dish). We had guests over & they were literally scraping the pan to get the last of it out for not seconds, but thirds. Thanks for the great recipe, Colleen.

Honey Glazed Ham

I really enjoyed this recipe & it made the house smell wonderful. I agree that you can scale back a bit. I made 1.5 the original recipe for a 9 pound ham & still had tons more glaze than I really needed. I also used about half the cloves suggested, and it was still flavorful. A suggestion for other fellow novice ham bakers - put the cloves in BEFORE scoring the ham. Thanks for the great recipe! Will use again for certain.

Baked Pineapple

This went over well at Easter Dinner. I, too, was sceptical about the cheese/cracker/pineapple combination, but it really is fantastic. I used sharp white cheddar & the flavors blended beautifully. The cracker topping complimented the other flavors & texture. This may well become a holiday staple at our house. Thanks!

Soft Sugar Cookies IV

These were just what I was looking for. My kids & I all love them! Already a new family favorite. I made them the size of golf balls, as I had seen recommended by other reviews, and it yielded 3 1/2 dozen. Will definitely make these again & again. THANKS FOR SUCH A YUMMY RECIPE!
