Cheeseburger Soup I

This recipe was okay (as it was written)...I am only giving it 3 stars because as it is written, I do not love it. But after changes were made it was a pretty good cold day soup. I did not use the celery or carrots, that is not on a cheeseburger. I used beef broth instead of chicken broth and the second time I made it I used velvetta instead of cheddar. Cheddar does not get that creamy when melted. I am going to try a pasta in it next time instead of the potatoes. All in all, good basis for a very filling soup.

Orzo with Parmesan and Basil

This is one of the most perfect side dishes I have ever made. I do what the recipe states except I do not add any basil. While the orzo is cooking in the chicken broth I saute 8 oz of sliced mushrooms in olive oil, set aside in a bowl and then saute an entire bag, maybe 10 oz of baby spinach in olive oil for maybe 30 seconds and then when the orzo is done cooking I mix it altogether and add the parm cheese. I make this with any meat and it is always LOVED.

The Best Garlic Bread

I make this same recipe using french bread cut in half length wise. In a bowl mix up about 1/2 cup mayo with about 1 cup shredded mozzarela cheese. ON the bread I spread butter on both pieces and sprinkle that with garlic powder and then spread the mayo mixture over that. This gets broiled med to low for about 3-4 minutes (until cheese mixture is browned and bubbling). I have never made this recipe and not been asked for the recipe. It can be very rich but with pasta it is AWESOME!!!

Chicken and Wild Rice Casserole

I have been making this recipe for years and even sell it to people as a frozen casserole. I use twice as much chicken though and use 1 pound of fresh, sliced and sauted in 3 T of butter mushrooms. I can freeze 2 STUFFED 8 x 8 aluminum pans or 1 STUFFED 9 x 13 pan. IT feezes SO well and I have NEVER made this for anyone and not been asked for the recipe. It is an absolute staple in our household.

Grilled Poblano Pepper and Mango Quesadillas

These were pretty good but needed a little something more. I made up some sour cream and dill mixture for the side and also added some shreddec cheddar to a couple of them to add more flavor.

Aileen's Punch

Very good punch. I used some mango/papaya juice mixture instead of apricot nectar and used maybe 3/4 of the 2 liters of Sprite, it was a fabulous combo and the next day I added some white wine to the mixture...even better! haha Good recipe!!!!

Best Chicken Pasta Salad

This recipe is pretty good although it is VERY ranch dressing tasting. I think I am going to add some other things to it next time as well, maybe some chopped carrots or green onions or something...seems like it was missing a certain flavor.

Spinach and Strawberry Salad

This salad has great flavor. The sweetness of the strawberries is really great. The only thing is the dressing is VERY oil based. Maybe next time I make it I will use a 1/3 cup of oil instead of a 1/2, or maybe try olive oil instead of vegetable (or actually the canola oil I used. ) Overall though this is really great salad with dinners.

Uncle Terry Meat

The flavor of this is wonderful BUT I cannot imagining that this thing would ever get cooked on a grill in that short of time. I marinated my roast for almost 48 hours, then grilled it in a grill pan for 45 minutes and it wasn't even close to being reddish/pink in the middle, still raw. So I put it in the oven for 1 hour and 20 minutes and then it turned out perfect! Although it was after 9:00 pm when it was finally done, we wrapped it up and will be eating it again tonight. The marinade was great, it would be fabulous too on a different cut of meat(perhaps london broil or steaks) that are usually prepared on a grill. I will stick with perhaps marinading actual roasts and baking them in the oven.

Texas Caviar I

This always goes fast. I omitted the green bell pepper and coriander and added a can of whole kernal corn to the mix. I have used dried cilantro instead of fresh and it is pretty darn good as well. It is really a tasty and refreshing dip.

Bacon Wrapped Smokies

Never have any of these leftover. I actually use a pound of smoked sausage that I cut into about 1/2 inch thick discs, wrap those in a half piece of bacon each, cover with brown sugar in a 9 x 13 baking dish and bake for an hour at 350. Always a HUGE hit. :)

BLT Salad

This is the PERFECT summer slad, it felt like summer today so we made it! I used a romaine and baby spinach mixture and used halved grape tomatoes and half of the bacon called for in the recipe. It was fabulous and nothing was left in the bowl!

Classic Spanish Sangria

This mixture was pretty potent! It had a really good flavor but I added some (about 3/4 cup to the pitcher) Sprite to cut the bite down a little bit. Great spring BBQ drink!

Baked Potato Salad I

This is a good potato side dish (truly nothing like salad but uses similar ingredients), very similar to many other cheesey potato side dishes though. I cannot believe how much american cheese this calls for though...24 slices if using a 1 pound package. I used about 1/2 that and it was plenty cheesey. I used reduced fat mayo and I used reduced fat sour cream, half mayo-half sour cream mixture. Nice tasting recipe overall though.

Bob's Blue Cheese Dressing

Melt In Your Mouth Toffee

This was fabulous. I have never made candy before. I omitted the nuts because we don't love them in desserts in our household. I spread this out in a jelly roll type pan and then put entire bar size plain Hershey bars on the top and sprinkled that with coarsely chopped Snickers bars. When the toffee itself had set and the toppings were melted I sort of spread them around. I omitted the choc chips too. It is VERY rich this way but not ONE BITE was left!!! Great holiday recipe!!!

Chicken Savoy

This is a very good quick chicken recipe. It takes very little prep yet is tasty enough to serve to company. I use basil instead of oregano in this recipe. Great with salad and orzo side dish!
