This is GREAT fish recipe. Very easy and tasty. I used this on orange roughy and talapia (very cheap fish!) too...thanks for a great recipe that will definately be used again during Lent! :)

Easy Slow Cooker French Dip

Reviewed: Mar. 9, 2004
I am giving this 5 stars because it really does have a good flavor. My husband sliced this up for the meal and did not slice it very thin so it was more like roast beef sandwiches but tasted really good. Thanks for the recipe.

Brownie Caramel Cheesecake

Reviewed: Mar. 9, 2004
I went by some of the reviwers changes, the larger brownie mix, addeed another cream cheese, more sugar, another egg and more vanilla to it and also went with the LaLechera canned stuff. First off, the brownie thing turned out well, nice and chewy and not dry at all BUT apparently that LaLechera stuff is the BRAND and there are different kinds of it...like caramel flavor and sweetened condensed milk flavor because I grabbed the sweetened condensed milk kind and it does nothing for the recipe. :) So I will be making this again and trying caramel for the center like you're supposed to do. Overall the flavor is good but I didn't get an overly sweet flavor in this like others have suggested. I will review it again when I make it according to the recipe. Thanks for the recipe though.

Spinach Stuffed Chicken Breasts

Reviewed: Mar. 2, 2004
These had a good flavor but the presentation wasn't what I had hoped for. I used fresh torn spinach instead of frozen and pounded the chicken very flat and rolled it up with the ingredients. Perhaps that is why it didn't look as appealing as others reviewers suggested. Anyway...it is a good recipe that I will using again and adding some variations to it to try some new things.

Grilled Salmon I

Reviewed: Feb. 26, 2004
Fabulous salmon recipe. I omitted the lemon pepper and just used regular ground black pepper. I used less brown sugar as well. I also used a grill pan on my stove for this since it is winter. I grilled it for about 8 minutes each side and it was perfect! Thanks for a great recipe.

Honey Bun Cake I

Reviewed: Feb. 23, 2004
EASY, EASY, EASY!!! I have made this cake three times in the last two weeks. It is so moist and is even good (though very fattening) in the morning with coffee. This is a recipe that you most likely have the ingredients on hand always so it can be made very quickly and also served warm so no need to plan ahead. I am so glad to have found this recipe.

Chicken and Wild Rice Casserole

Reviewed: Feb. 15, 2004
I have been making this recipe for years and even sell it to people as a frozen casserole. I use twice as much chicken though and use 1 pound of fresh, sliced and sauted in 3 T of butter mushrooms. I can freeze 2 STUFFED 8 x 8 aluminum pans or 1 STUFFED 9 x 13 pan. IT feezes SO well and I have NEVER made this for anyone and not been asked for the recipe. It is an absolute staple in our household.

Italian Meatball Sandwich Casserole

Reviewed: Feb. 11, 2004
This is a very good and filling casserole. I made the following alterations: I sliced french bread into inch thick slices, placed that on the bottom of a casserole dish, filled in any "holes" with more of the bread so that there was a single layer of the bread, then spread the cream cheese mixture over that and put the meatball/sauce mixture, (I did not add any water to this dish.) The bottom was nicely baked, not soggy and the filling was done just right. My husband LOVED this dish, I liked too but am not as big of a fan of "comfort food" as he is but if you are this is a fabulous dish for you. :)

Cheesy Chicken Pot Pie

Reviewed: Jan. 12, 2004
This is a really good winter time meal. I doubled the recipe to make two...it worked out well. I added plenty of salt and pepper to it, I think it would be rather bland without extra pepper. I also used chicken broth instead or stock and cooked mine almost an hour to get the crust done. Good recipe...thanks!

Day Before Mashed Potatoes

Reviewed: Jan. 9, 2004
Made these with a great tenderloin recipe on this site. They are perfect for entertaining because you just put them in the oven well after they are prepared. I did not use sour cream but did add about 1/3 cup of half & half to the mixture. They had a GREAT flavor and reheated well too with a little milk added to thin the mix. The longer they sit before baking the better the flavor seemed to be. Thanks!

Praline Sweet Potatoes

These were absolutely fabulous except they make WAY more than 6 servings! They were a great combination for our Christmas meal and we are STILL eating on them. :) Thanks for a great recipe.

Creamy Pesto Shrimp

Reviewed: Dec. 8, 2003
I must have done something wrong with this...maybe cooked the sauce too long or let it boil or something...it wasn't the least bit "creamy", lumpy and runny though. The flavor was GREAT but the consistency of the sauce wasn't appealing. I will try it again though.

Aussie Chicken

Reviewed: Nov. 18, 2003
This is a great recipe but the mustard is a little overwhelming. I also did not have any corn syrup so I added a a little more honey. It is a great recipe I will just use less mustard next time. Thanks!

My Crab Cakes

Reviewed: Nov. 18, 2003
These were very good! My husband even called them "restaurant quality". They really were easy to make and I used one can of crab and then a cup of lump crab meat from the seafood area of the grocery store. They were great and I served them with a "mayo based" roasted red pepper sauce, very good recipe! Thanks!

Judy's Strawberry Pretzel Salad

Reviewed: Oct. 30, 2003
I have made a recipe similar to this before but the top doesn't gel properly or the bottom gets too soggy...this was PERFECT!!! I used only 1 1/2 cups of boiling water, two 10 oz. packs of strawberries and only one thing of cream cheese. The recipe was sooooo good and the crust was so crunchy, I loved it! Great recipe and am thankful I found it, there is a restaurant here in our town that serves this and now we have a similar recipe! Thanks a bunch!

Aileen's Punch

Reviewed: Oct. 20, 2003
Very good punch. I used some mango/papaya juice mixture instead of apricot nectar and used maybe 3/4 of the 2 liters of Sprite, it was a fabulous combo and the next day I added some white wine to the mixture...even better! haha Good recipe!!!!

Award Winning Peaches and Cream Pie

Reviewed: Oct. 5, 2003
I am giving this 5 stars because I truly loved the flavor of this dish but the crust was not what I would have expected. It had no "rise" to it when it baked and very cake like. Maybe I should double it next time? I too used a spring form pan and baked the crust alone for about 5 minutes before adding everything else. I used fresh peaches this really is a very good and EASY dessert. Thanks!!

King Ranch Chicken Casserole I

Reviewed: Oct. 5, 2003
I made this last night, so easy, very flavorful (spicy!) and we all thought it was a keeper. I think I am going to add more chicken next time though, it makes a lot of "filling". I also used 98% fat free soups and they tasted just fine. Nice attempt to "lighten" it up. Thanks for sharing!
