Blackberry Cobbler II

Excellent recipe, very easy! I made this for my husband and one of his friends this weekend.....they thought it was outstanding. I had to use frozen blackberries, but it still came out great. I made 1 1/2 times the topping as suggested, and it came out perfectly. I started to make it in my cast iron skillet, but it was actually too big (it's huge), so after boiling, I poured the berries in an 8x8 casserole. I have been told this is to go in my permanent collection!

Sweet Potato Pie II

This is simply the best sweet potato pie I've ever had. Even my friend who swore nothing could be better than her mother's is now converted to this recipe. I followed it almost exactly, just a touch more spices, including a dash of ginger. This pie comes out at just the right balance of sweet and spiced. The rum gives it a nice little kick, and this comes from someone who doesn't like to drink alcohol at all!!

Creamy Peanut Butter Fudge

Sweet Potato Pie II

This pie was a little too sweet for my taste, but my friends loved it! It took a lot longer to bake than stated in the recipe, and slighty carmelized and cracked on top, but it tasted just fine.

Baked Potato Soup I

Absolutely the best potato soup I've ever made. I did follow some the of other users suggestions. I cooked the roux a little longer than called for and I used 4 cups of half-and-half and three cups of milk. I also used yukon gold potatoes and didn't peel them. I used a small sweet onion and the leafy tops of four celery stalks, both of which I sauteed in butter. I added 2 teaspoons garlic powder, 2 tablespoons chives, 1 tablespoon parsley, and about 3 cups of cheese. I also added a can of chicken broth during the thickening stage just because I thought it would need more liquid. It came out extremely thick and rich, almost a chowder more than a soup, but everyone loved it. They said it was very filling and flavorful.

Banana Cream Frosting

I used this recipe to top my son's cupcakes for his second birthday. I cut the milk in half as suggested and left out the rum, using about 2 teaspoons of vanilla instead. I also refrigerated the frosting until right before serving so it would remain thick enough not to slide off the cupcakes. My husband loved the frosting as did my son.

Peanut Butter Fudge IV

Good flavor, but I don't think three minutes of boiling was long enough. It didn't set well at all, stayed very very soft. But it did taste great. Next time I think I will use a candy thermometer instead of just timing it.

Cinnamon Raisin Bread I

Wonderful recipe! I had to hide a loaf to make sure my family didn't eat it all. My loaves weren't quite the same size, I didn't roll it out evenly, oops on me, but it came out perfect anyways. Highly recommended.
