Grilled Chicken Thighs Tandoori

This is my new favorite tandoori chicken recipe. I didn't have fresh ginger and used dried ground instead. I also added 2 tsp of cayenne pepper, but otherwise followed the recipe as written. I grilled it on a gas grill and served with Indian Basmati Rice from this site and steamed lemon broccoli. Will definitely make this again.

Grandma's Green Bean Casserole

I've been making this recipe for a couple of years now for holiday dinners. I usually saute the onions in bacon drippings to which I add the flour called for in the recipe. I add the cheese to the sauce mix and top with french fried onions. I will never make the old soup based Green Bean Casserole again!

Indian Style Basmati Rice

This fragrant, delicious recipe was a hit served with the tandoori chicken thigh recipe from this site. I didn't have cardamom, had to use some ground spices instead of whole, and added curry leaf and golden raisins. We added this recipe to our family favorites.

Impossible Coconut Pie II

I've been making a recipe similar to this one from an Amish cookbook for about 30 yrs. I was happy to find it here since it is our favorite coconut pie recipe and that page has fallen out of the cookbook. Much better than the ones with baking mix. We prefer it without the nutmeg and I always sneak in an extra half cup of coconut.

Peanut Butter Vegetable Chicken Soup

Great tasting soup. My husband said it's the best soup I've ever made. I used natural peanut butter and since I am low carb dieting, I added a medium peeled, diced turnip instead of potato. I also used a can of rotel tomatoes instead of plain tomatoes and an additional 2 tbs of peanut butter since subtlety is wasted on me. It still didn't taste like peanut butter, but has a great flavor. I sprinkled chinese red pepper on my serving. (forgot to add that I cooked an entire medium chicken for this recipe!)

Tim's Green Bean Casserole Extraordinaire

My family will not eat swiss cheese, so I used the Mexican Blend cheese. There was so much grease from the butter and cheese that I used paper towels to soak it up after the mixture was combined. I also used petite, whole frozen green beans. I should have followed other reviewers' suggestion to pre-cook the frozen green beans before adding to the mixture because that may be why the fat separated. As the beans thawed they made the mixture wet and had to cook on the stove top to reduce. But I was glad to remove the excess oil. It wasn't too popular and I had another batch already prepared for the following day's big gathering. I doctored it with cream of mushroom soup and topped with french fried onions and everyone loved it. I guess it was more traditional tasting by then.

Slow Cooker Mashed Potatoes

Great tasting recipe. Used the concept of the "refrigerator mashed potatoes" from this site to make ahead and then put in crockpot next morning. First time they were too dry and stuck to the crockpot, but still good. Heated in microwave and added extra cream the second time before placing in crockpot and they were wonderful. (I doubled the recipe for a large crowd--just used enough broth/water to cover while cooking.) Good to the last scoop.

Slow Cooker Creamed Corn

Very good recipe. Followed the suggestions of other reviewers and doubled the corn. Second time I made it I more than doubled the corn and it was a hit. I used Splenda instead of sugar and used the "super sweet" frozen corn.

Sour Cream Refrigerator Mashed Potatoes

Thanks for sharing this recipe. I made it for Christmas dinner and it was a big hit. Trial run was a little dry, so I added a little extra cream. I also made a combination of this recipe and the crock pot mashed potato recipe which was out of this world and kept the potatoes hot throughout the entire buffet meal.
