Creamy Spinach Tortellini

Yummy! I didn't have mushrooms, so I eliminated them and instead of cherry tomatoes, I added a can of petite diced tomatoes (drained). It kind of tasted like warm spinach dip on top of pasta!

Brown Sugar Chops

WOW! At first I thought to myself, what's the big deal? Only butter and brown sugar with a bit of soy sauce? These chops were wonderful!! The butter and soy penetrates the meat while the brown sugar carmalized on top. I used boneless chops, so I only cooked for about 15 minutes covered and 10 minutes uncovered. PERFECT!

Cream Cheese Jalapeno Hamburgers

Okay, these were AWESOME....with a few changes. I added only about 1 1/2 cups of FINELY diced jalapeno (seeds and membranes removed) along with the 8 oz block of softened cream cheese. Then I just mixed the mixture into the meat and made patties. We then grilled on a well-oiled grill. They turned out great! Next time, we plan to top them with bacon...YUM!

Twisted Green Bean Casserole

Raisin Finger Sandwiches

Yummy, Yummy, Yummy! These were SO easy and tasty! I wasn't sure at first, but the combination of the raisin bread and cream cheese mixture was great. I combined the cream cheese and mayo together with the pecans the night before making the sandwiches (to let the flavors meld). I will definately be making these again.
