Florida Strawberry Muffins

after reading the reviews, i decided to use 2 cups of strawberries too with a bit more sugar. but unlike some of the other reviews, i think i had yielded too much liquid out of my strawberries... after adding in all the liquid, the batter was too watery, and therefore i randomly added in more flour. also, i baked at 200C only, and perhaps that's why it took over 25 mins baking. after all these hassles, the muffins came out fine with a crispy top, but the taste of strawberry is still not too outstanding... may add some strawberry yogurt to up the taste next time.

Banana Muffins II

this is just a slam-dunk! as long as the bananas are ripe enough, i don't think anyone can fail this one!! i don't have all-purpose flour and therefore i used cake flour instead (2 more tablespoon per cup), it just worked out perfect. simple and tasty. i am now waiting impatiently for my bananas to ripen!

Blueberry Cream Muffins

frankly, i am not a fan of blueberries. i still rate this one with 5 stars bcos this muffin base is wonderful, very moist and fluffy. i will try next time replacing blueberries with mocha-choco chips. i did add a struesel as recommended by the other reviewers, and the struesel is really a perfect match to the base and it's making the whole thing special. i can't stand the smell of cinnamon, but funny enough, i did add cinnamon and nutmeg to the base, and cinnamon to the streusel. okay, all my "guinea pigs" went thrilled! haha!! this recipe has made me like a muffin expert!! okie, tweaks that i'd made: 1) i cut back oil to just 3/4 cup; 2) i added cinnamon 1 tsp and nutmeg 1/2 tsp; 3) i used 1 cup white 1 cup brown sugar; 4) i also added 1/2 tsp of baking powder; 5) i tossed the blueberries with a bit of flour before adding them into batter (but they still insisted to sink to the bottom : ( ); 6) i added streusel: 3/4 cup brown sugar 3/4 cup all-purpose 1/2 cup butter 2 tsp cinnamon. i am very happy with this one. it really worths a try, everybody!!

Strawberry Lemon Muffins

i chose this recipe 'cos i wanted to use up my strawberries in the fridge, but not enough for them to take the leading role... not satisfactory... the muffins did rise nicely, but the taste was sssoooo bland -- i had already put in more than enough lemon juice and zest, yet i could not taste them... luckily i had decided to put in some poppy seeds, and also some more zest on top before baking, which had helped to remind me that, "oh well, this is a lemon muffin..." ** UPDATE ** i am giving this 1 more star 12 hours later. i was disappointed last night and i threw the rest into the fridge. this morning i microwaved one for breakfast -- it's moist, and it has a better lemon flavor now (still can't taste the strawberries though)

Fudgy Chocolate Chip Muffins

can i rate it with 10 stars? it's sssssssoooooooooooo good! i used plain yogurt instead of applesauce, omitted the cinnamon, used only white sugar 3/4 cup total, extra dark cocoa powder up to 1/3 cup, and added 1/2 tsp baking powder and a pinch of salt. the batter was a bit dry (probably 'cos i put in more cocoa powder than what the recipe called for), hence i added 1 more tbsp of yogurt. they did rise very nicely. they looked professional, they tasted professional... just that the whole house's still smelling chocolatey after several hours... haha!!

Nana Dot's Irish Soda Bread

i replaced milk + vinegar with same amount of fat-free plain yogurt (plus a tiny spoonful more 'cos i think the dough was too dry to stick together completely), and i had made them into 8 small loaves instead of 2 big ones, so i know my version is not the genuine irish soda bread. but it still turned out to be tasty. overall, this recipe is simple, easy, and quick. really worth a try!
