Green Chile Spinach Quiche

I tried this for the first time at Diana's house (a fellow all recipes member) after I brought back some fresh green chile from New Mexico. It was delicious. When I got home, I made it for my husband, adding a total of 1 1/2 cups of fresh green chile. After reading plenty of reviews, I also added red and orange peppers, onions, bacon, and used half ricotta and half cottage. I also used fresh spinach cooked in some of the grease from the sausage from a local butcher. The butter I used was homemade, and I used it to cook some mushrooms which I also added. I needed to put a lot of substance into it for a healthy, FILLING, main dish. I did not use a crust and the pie came out beautifully as well as the small muffins I made and gave away. My husband LOVED it!

We really loved it. I think i cooked it too long. Next time I will cook it only abou 3 - 4 minutes each side on my grill on only medium/high heat. But very very good!!!

The Best Caramel Apples

I loved these! So much easier to make than I would have guessed. I made sure to drop my apples in boiling water for a bit and dry them off really well, letting them get nice and cool before i dipped them in the caramel. I think I over cooked the caramel just a tad - I did not have a candy thermometer! But I used a knife and cut slices and it was every bit as delicious and not as messy! LOL I used Karo Light Corn Syrup, but I think i would like to try it with Karo Dark syrup.

Easy Weeknight Chicken Parmesan

We LOVED this. I also breaded the chicken using the milk, flour, egg and bread crumb combo thanks to the suggestion in a previous review (Colorado Trio); I used chicken breasts but sliced them into three pieces or so before I breaded. We ate this meal without the spaghetti because we stay away from too many carbs. I had plenty of chicken, we had a salad on the side and it was yummy! I didn't add anything extra to the sauce. This is going to be a regular during the school year! Easy and delicious.

Warm and Limey Chicken Salad

great salad. thanks! I didn't have golden raisins but used craisins. I used baby spinach instead because I had it on hand. YUMMY salad! I used another dressing for a lime strawberry salad that was poppy seed but I added strawberries to the dressing as well. Basically I took ingredients I had on hand and made this recipe work in conjunction with another one. Worked perfectly.. I am not very creative so I need these recipes to help me get started. Thanks again!

Shells with Italian Sausage and Ricotta Stuffing

Quick and easy enough and as good as lasagna. I overcooked my noodles a little so some of them were falling apart and didn't hold together as well. Pasta carries a lot of carbs but this dinner was worth it. I loved the addition of sweet italian sausage. Next time I will probably use twice as much sausage.

Garlic Mashed Cauliflower

Delicious. this will become a regular with our dinners. We never eat mashed potatoes due to the starch and carbs. But THIS . . . well this is so good! I whipped it until smooth in my vitamix. I also added a bit more cream cheese, maybe another tablespoon, and a bit of cream. I used shaved parmesan as well as grated. The grated really brought out the parmesan flavor, so I'm not sure that using the shaved added anything. I just had some in my refrigerator and thought I'd use it. The grated is much stronger. Bottom line, I am making this regularly from now on!! YAY!! it's like we get mashed potatoes again! NO starches or carbs!

Maple-Balsamic Marinated Steak with Grilled Pear Salad

Great new marinade and flavors for our steaks!! I would never be able to think of these flavor combinations myself. I used a balsamic vinaigrette dressing as suggested in an earlier review, blue cheese, and almonds. Delicious! My husband is convinced that I can cook a better steak than most restaurants now - so he won't order one when we go out. It's very complimentary! Thanks for another great recipe and twist on a "regular" steak dinner.

Cheesy Broccoli Quinoa

I don't like the smell of cooked broccoli but I was so pleasantly surprised at how good this was. We left the cheese off to eat it with curry, then added to cheese to use it as a side for left overs during the week. Great both ways!!!

Lime-Berry Chicken Salad

great salad! I added strawberries to the dressing. I left out the peas. I added craisins and mandarin oranges. Basically, it was this recipe combined with another recipe I took the parts that looked the best to me. I'm not creative so I need these recipes to get me started!!

Bowties with Italian Sausage in a Cream Basil Sauce

This is the only pasta recipe I usually make. We can't afford to eat pasta very much - so when we do I have to make sure it is a GREAT recipe! The sweet Italian sausage makes it worth all of the carbs!

Lamb Feta Peppers

Lamb is a bit of a unique taste, but my husband loves it so I tried these peppers. I used double the sausage and less rice. I diced the tops of the peppers and added them to the stuffing. He loved it! He said it was the best meal he has had in a long time. Next time I will take another reviewer's suggestion and use quinoa instead of rice, and will use a can or two of stewed tomatoes instead of the sauce. I had plenty of stuffing - not enough sauce or peppers, due to doubling the sausage. I did cook the peppers for a few minutes first in salt water. We like them a bit softer. This one is a Keeper!

Cedar Plank-Grilled Salmon with Garlic, Lemon and Dill

We really loved the dill lemon mix -and the cedar plank just put it over the top! All of my neighbors made comments about what I had been cooking. So good! This is definitely going to be a regular!

Chiliville Chili

Best Chile EVER! I can say this because I don't like Chile! The sausage was the key ingredient, in my opinion. My husband thought the addition of celery was genius (I just let him think it was my idea!). This is a monthly "must have" for us from now on during winter months. Thanks Johnsonville for great sausage and a great recipe! Love the idea someone gave of adding bow tie pasta!
