Chocolate Fudge Buttercream Frosting

Great, rich chocolately taste with a good consistency. I put this on my husband's birthday cake, and it was a hit. It reminds me of fudge. I don't use shortening, so I just used extra butter in place of the shortening. Will go to this recipe for all my chocolate frosting in the future.

Crazy Chocolate Cake

This is very moist and simple to make. I didn't mix it in the cake pan (to avoid scraping up my cake pan or getting undisolved lumps), and it turned out fine. It has a nice rich taste (I added a tad more cocoa and a tad less sugar for a richer chocolatey taste.) FYI: The vinegar reacts with the baking soda and makes the batter bubbly. If this doesn't happen, your baking soda is probably old and the cake won't get fluffy and won't stay moist.

Quick and Easy Pizza Crust

Love it! This is so simple and has a great texture. I add a bit of granulated garlic, oregano, and basil to add flavor, and I also use half whole wheat flour. Super easy and quick.

Chocolate Frosting I

I liked this recipe quite a bit. I put it on the magic chocolate cake recipe on this site for a double chocolate cake. It was simple, but it barely covered my 9x11 cake, so double the recipe if you want thick frosting or a double layer cake. It is rich and chocolately. The reviews that called it grainy either didn't cream the butter or didn't use hot water - it helps to dissolve the sugar and cocoa and combine the ingredients together. Mine was creamy and delicious!

Sweet Potato Pie I

This was a good recipe - it didn't overly impress me, but it had good sweet potato flavor and cooked up nicely. I didn't boil the potato in the skin - I skinned them and cut them up to boil them more evenly and quickly. I also decreased sugar as suggested by others (1/4 cup brown and 1/4 cup white). I also decreased butter to 7 tbls instead of the 8. The pie cooked up solidly in the middle right at 55 minutes, and my toddlers ate it up.

Zucchini Cobbler

Pretty good! My kids ate it up and didn't even know it was zucchini. I've made this twice and once I added one apple in with the zucchini, and we couldn't really tell the apple pieces from the zucchini ones. The seasonings hide the zucchini well. You should definitely peel the zucchini if you want to disguise it.

Garlic Chicken

Great recipe! Simple and easy to do. I had some infused garlic oil, so I just used that instead of making my own for this recipe. The bottom of the chicken gets a little soggy, but the top is nice and crispy. I did spray the top of the chicken with an olive oil cooking spray to help it get a bit more brown and crispy. Chicken stays moist if you don't overbake. I had cut a few breasts in half for the kids (to make strips), and they were a tad drier than the whole breasts.
