Cooking for one is something I cannot get used to, so I have stopped cooking entirely. My husband James, the person who inspired all of my cooking, died in late May in a freak accident. Getting used to not being married anymore, not having someone to "take care" of, not having someone to cook… MORE

About this Cook
I'm Carol. My husband and I reside near the Bay Area, where we enjoy our house, our 2006 Mustang GT and 2005 Chrysler 300, our assortment of reptiles, and our lack of children.
My favorite things to cook
Alton Brown's Baked Mac 'n Cheese is my absolute favorite, followed by stuffed shells. I guess I'm a pasta-holic!
My cooking triumphs
I love "winging it" with cooking and have gotten pretty good at it.
My cooking tragedies
A fair amount of my baking doesn't turn out.

Fabulous Fudge Chocolate Cake
This stayed moist for nearly a week! I shared it with the ladies at the laboratory and they absolutely loved it. One even requested that I bake it for her nephew's birthday party next month! Excellent cake that I can't rave about enough. I increased the chocolate to an entire bar but that was the only change I made.

Spicy Rapid Roast Chicken
Did not cook in the hour the recipe claims. It took more than twice as long, and it was an average-sized Foster Farms chicken. It ended up flavorless and my home reeks of smoky-burnt-chicken-smell even several hours later.

Stuffed Mushrooms III
Decent as an appetizer. A little too much cheese; some chopped cooked spinach mixed in with the cheeses probably would have balanced it out better.
