Rich and Creamy Beef Stroganoff

This was absolutely delicious! I will definitely be making it again. I pretty much followed the recipe exactly as shown, only used beef tenderloin instead of beef chuck roast. This really turned out fantastic!

Hot Tamale Pie

Wow. This was delicious! I will definitely be making this again. I added a tablespoon of my boyfriend's "secret" chili spice mix (he won't tell me his secret, said it's a hodge podge of 15 different spices though). I omitted the chipotle powder and added a can of black beans and a 1/2 cup of onions which I sauteed with the meat (the onions). I used a Mexican cheese mixture because it was on sale. Seriously, this was soo good! I highly recommend this to everyone!

Country Apple Dumplings

Holy Moly this was the most delicious dessert I've had in a LONG TIME! I can't wait to make these again. Although, I do feel that the butter and sugar were a little much. Next time I might cut the sugar and butter in half. Also, I used Sprite instead of Mountain Dew. Believe it or not, the local 7-11 didn't have Mountain Dew. Even with the Sprite this turned out perfect! I sprinkled the crescent dough with cinnamon before rolling up the apples and I also added some vanilla extract to the sugar/butter mix. This was absolutely delicious!

Chilaquiles III

this was excellent! we fried about a half a package of tortillas separately until golden brown and put them aside. Then I cooked chorizo separately and put that aside. Then sauteed tomatoes, onions, minced garlic and serrano peppers and then added the eggs until cooked through. Then, we layered everything on our plates, tortillas, chorizo, eggs, cojita cheese, and crema fresca, and topped everything off with red enchilada sauce (hot). This was soo delicious and totally authentic and the tortillas stayed crispy because we didn't cook them with anything else.
