This was my first attempt at homemade sauce. It turned out well, of course I tweaked it a little to my liking. I omitted the wine (dry county), and placed all the spices (w/a little extra e.v.o.o. to help the spices blend better) and tomatoes into a crock pot on high. Sauted onion, fresh sliced mushrooms, thinly sliced zucchini w/e.v.o.o. & large crushed clove of garlic, transferred (with a pinch of sugar) into crock pot and continued to cook on high for one hour (1.5 hrs total). Served with penne pasta, topped it with a little grated mozzerella, breadsticks, and a salad. My finicky husband picked out the zucchini, but nonetheless, this a good meatless sauce!! It was very easy, the prep time took a little longer b/c I used fresh veggies. (I may add some shredded carrots next time to appease my husband.)
I did double the batch because I didn't know how many were coming over, and it made PLENTY!!! I had enough to feed 10 people. I can see freezing the sauce in small batches for quick during the week dinners. It turned out great, and I got good reviews from my friends I served it to.
