Cheesecake Cupcakes

These were fantastic, and a big hit at my party. I went with the advice of 3 eggs for the 3 packages of cream cheese. For the topping, I used lime curd. Scrumptious!!

Fluff Dip for Fruit

Yummy and very rich. This recipe makes a TON of dip, so make it for a party or be prepared for lots of left overs. I ended up adding a bit more amaretto to give it more flavor.

These are wonderful, easy, and delicious. I made them as directed, but cinnamon or changing the honey/sugar ratio would be good, too. Nice, soft, simple cookie.

Red Velvet Cake III

I should have known better than to try to skip steps with the cake mix in this recipe. I followed this recipe to the letter, other than tripling the cocoa, and it was completely tasteless. Neither the flavor nor texture were like true red velvet cake. I liked the fluffier version of cream cheese frosting, but my family didn't. If I were to ever try this again, I would definitely use chocolate pudding in the cake instead of vanilla. But I think I'd be better off with a from-scratch recipe, no cake mix involved.

Fabulous Beef Tenderloin

As suggested by others, I used 1/2 low sodium soy sauce and 1/2 Tastefully Simple Merlot sauce, and unsalted butter. I thinly sliced an onion and smashed 3 cloves of garlic. All of this went on a 6 lb. tenderloin for Christmas dinner. It took about 1 hour and 10 minutes to reach rare-med. rare stage. Absolutely delicious! Added fresh mushrooms around it for the last 20 minutes or so, rolled them in the pan gravy as they cooked. For gravy, after I removed the roast from the pan to rest, I put the roasting pan over 2 burners, added a can of beef broth and some water/cornstarch. Brought to a boil stirring constantly and cooked down just a bit. Super delicious! So glad to know how to cook a tenderloin now. Thank you for such a super recipe!!!!

Trout Amandine

I fixed this for the family tonight, and everyone loved it! Completely fabulous, and very easy. I sauted the fish in 1/2 butter, 1/2 EVOO and then did the almonds just in butter. YUMMY! My picky eater son was the first one finished! I'll be doing this often, and will try it on other fish, maybe tilapia.Thanks for a super recipe!

Broiled Tilapia Parmesan

YUMMO! I now fix this regularly, on any type of mild, white fish. You can leave the butter out and use lowfat mayo, and it's still great with way less fat. Play with the seasonings to get just what you like. We leave out the celery salt.

We love the taste, but it tends to turn out a little dry. I add a little water (maybe 1/4 cup) when I'm mixing it up so it doesn't dry out in the oven.

Tamra's Lemon Artichoke Pesto

Crunchy Oven Fried Tilapia

This is super! Really tastes like fried fish. It's wonderful with catfish. Even my Louisiana relatives liked it! I leave out the basil, but add some cayenne to the flour. Yum!

Honeyed Sweet Potatoes

I added the cinnamon and ginger as others suggested. I also mixed in some pecans. It took longer to cook than the 30 min. stated. I finished it off in the microwave. We loved the honey flavor. Could do it with less butter.

Buttery Cinnamon Cake

I followed others' advice and upped the cinnamon in the cake batter to 1 Tablespoon, and used butter instead of shortening. For the sauce/glaze, I used brown sugar instead of white and 2 teaspoons of cinnamon. The family raved! Thanks!

German Pancake

This is like one big fantastic popover, and so quick and easy to make!! My family adored the syrup! 2 tips: 1)spray pan with cooking spray before putting in the butter. Despite the layer of butter in the bottom of the pan, mine still stuck. 2) Cook the syrup in a large saucepan or pot. It expands a lot while it's cooking. My family wants this for Christmas morning breakfast. Thanks for a great recipe!

Giant Chocolate Chip Cookies

Maybe my ice cream scoop was bigger, but I didn't get the full batch out of this, and had to do it again. (NOT that we minded!!) Yummy recipe, but needs some salt in the dough, about equal to the amount of baking soda.
