Manicotti Shells
I agree with other reviewers who say they will never buy manicotti shells at the store again. These really are that good! I ended up with 20 7in. shells that I filled with the Manacotti Alla Romana found on this site. They were easy to make, didn't break when filling, and tasted fantastic. The recipe as is says it serves 4 but I ended up with two 9 x 13 pans of manicotti, 10 shells in each pan.

Manicotti Alla Romana
We just got back from touring Italy and after all the great food we ate I couldn't stand the thought of opening a box of spaghetti and a jar of sauce for dinner. This recipe is SO worth the effort. It really did rival the best of what we ate while traveling. I used italian sausage, added 1 tbsp of italian seasoning, halved the spinach, and made my own manicotti shells (recipe from this site). I ended up with two 9x13 pans. We ate one for dinner (no leftovers) and I planned to freeze one but everyone in the family requested that I use it for dinner the next night.

Banana Crumb Muffins
WOW! These muffins are SO good! My daughter rated them worthy of 1,000 stars and my teenage son said "I guess I'll try one", took a bite and then added, "or three", and took two more on his way by. I replaced 1/2 cup flour with 1/2 cup whole wheat flour, added 1/2 tsp cinnamon and 1/2 tsp butter and nut flovored vanilla to the batter. I ended up with 12 muffins. Something to note... my oven runs cool so I expected them to take 20-23 minutes and they were perfect in 18.
