Pani Popo (Hawaiian Coconut Bread)
After reading the reviews I wasn't sure if I should use coconut milk or cream of coconut. Hmmm. Ended up using cream of coconut and Bridgeford frozen dough (do not use canned biscuits). Didn't want to waste a whole can of condensed milk so I just added some corn syrup and maybe a tablespoon of sugar to a half a can of cream of coconut. Made a smaller pan with 8 rolls just in case we didn't care for these. Wish they had a bit more coconut flavor but they are really good and soooo easy. They are gooey on the bottom and kind of crunchy chewy on the top. Will be making a full batch for Mother's Day dinner. I know I didn't follow the recipe exactly but if you love bread, donuts, etc you will love pani popo.

Easy Peach Cobbler II
This cobbler turned out beautiful, tasted GREAT and was so easy to put together! Added a can of apricots with the peaches (sliced fruit up a little thinner). Left about a 1/4 cup of the syrup in the fruit, I like it juicy. Cut the bread into cubes. Also cut sugar to 1/2 cup - didn't use full amount of butter - added a dash of cinnamon and a teaspoon of vanilla. This is one of those recipes that you can put together quickly and always have the ingredients on hand. Serve warm with vanilla ice cream. This recipe is a keeper.

Easy Broccoli Quiche
This quiche looked great but just tasted OK. Didn't enjoy the broccoli in it as much as I thought I would. Next time I'll use spinach instead. Just a personal preference I guess. 3 eggs and 1 cup milk worked fine. Added some cooked bacon and sausage and only used 1/2 of an onion. Be sure to chop up broccoli in small pieces and cook well. Broccoli doesn't cook much more in the oven. I prebaked my pie shell (450' for 7 min.) and the crust came out perfect - not gummy on the bottom. The mozzarella cheese was a bit chewy and I even used some cheddar with it. Next time I'll use swiss/cheddar. Used very little salt because of the meat I put in but 1 teaspoon of salt seems like a lot. Recipe doesn't need the last tablespoon of butter. If you really love broccoli this one may be for you.
