I am a stay at home 4-legged mom. We have dogs, horses, cows and cats and feeding time is always busy around here. I enjoy cooking and baking and am always up to try something new.
My favorite things to cook
I LOVE to bake even though I can't eat most of it! We really like flavor in our house, so anything with lots of spices and garlic always is a hit.

Jello. For some reason I am completly unable to make regular jello!

Hudson's Baked Tilapia with Dill Sauce
I did everything per the recipe and I personally thought as did my non-fish eating spouse, that the fish was wonderful as stated in the recipe. I did not care for the sauce but my spouse loved it with one exception, she said the lemon slices sucked some of the seasoning and sauce away. So changes for next time: omit the sliced lemon, bump the lemon juice to 1-2TB, switch out mayo and sour cream for greek yogurt, if needed reduced with a little chicken stock.

Hummus III
I love plain hummus, without all the extra flair, and this was it! A traditional, basic hummus! I did go old school and soak dried chickpeas for a day in some salted water, drained, and then brought to a boil in more salted water and left to simmer for about 3 hours. I personally, after the first batch, would drop the tahini to 1/4c and the lemon juice to about 1/8c, would add in some of the juice the chickpeas boiled in and as always, I added more garlic. Absolutly wonderful!!!

Delicious Ham and Potato Soup
Fantastic! Followed contributors suggestion and really didn't measure any of the dry ingredients; couple of potatoes, skin on, 3-4 stalks of celery, 4 large carrots, small onion, couple handfuls of ham.... hard to screw up! Unless you want soggy mashed potato like soup when you reheat, do add some water, broth, milk, something when microwaving leftovers, this bad boy gets THICK!
