Pineapple Chicken Delight

I am newly married and attempting to cook delicious meals for my new hubby. This was such an easy recipe - I figure anyone can do it! Now my hubby refers to me as an awesome cook and I didn't even have to go through any hassle to make him an amazing meal! Plus, we both LOVE pineapple! I made it for my family and they really enjoyed it. It's so true that the pineapple & juice makes the chicken SO tender. 1 time I was out of pineapple and just used OJ. Still wonderful but would prefer the original recipe. You can add so many things though: potatoes, onions, carrots, or bell peppers (capsicum). I HIGHLY RECOMMEND!!!

Chocolate Zucchini Bread

I was a bit wary to attempt to make this at first. My fiancé even teased me because it was Chocolate and zucchini combination! But I had a zucchuni in the fridge I needed to use. I made a few alterations: Since I didn't have baking powder, I used baking soda with a little plain yogurt and tartaric acid. I also used drinking chocolate powder (5-6 tbsp) because I didn't have any baking cocoa on hand. I left out almond extract, added extra vanilla. Left out pecans and raisins (it would be even better with them in it though!) nut I added chocolate chips!! I didn't have loaf pans so made 24 servings in 8x8x2?? pyrex dish. It turned out GREAT!!! DELICIOUS!!! If you are unsure about baking with zucchini, don't be - just try it!!! You won't be disappointed My fiancé and his friend were hushed with their mouths full of this great stuff :) Could possibly be compared to a brownie!

Peach Upside Down Cake II

I made this for my fiancé as a surprise when he came home from work. It was great because I already had all of the ingredients in the pantry and didn't have to go to the store!! It turned out great! The only thing I would suggest is if you are using the juice from the peach can instead of orange juice, you may want to add a bit more sugar. Don't get me wrong, it turned out wonderfully but wasn't quite sweet enough. Also, best eaten warm! Makes a great light cake/coffee cake! Enjoy! :)
