Whit's Chicken Enchiladas

Very good but oh so rich! I like spicy food so I added extra jalepeno and some red pepper flakes. Nextime I may add some chili powder and green onions to the chicken mixture.

Coconut Icebox Cookies

Good, next time I might double the coconut extract as I did not think these were all that coconutty. My husband said they were perfect and I am not tasting things right because I'm pregnant so maybe he's right :)

Turtle Cheesecake

Great! I used shortbread cookies for the crust and decorated the top with crushed pecans, chocolate and carmel drizzles and a chocolate turtle on each piece. I donated it for a bake auction funraiser and it made over $30!

Empanadas

These were good I got a few compliments. I did not find the dough difficult to work with but I let it set overnight. I used apple pie filling I pureed it so there would be no large chunks.

Tres Leches Cake

Awesome! I used 2 9'' pans and put a layer of fresh strawberries in the middle with some of the whipped cream. I also used all of the milk I just kept adding more to the cakes as they absorbed it. I also sliced off the top crust for eiser absorbtion. Soooo Good!!

Absolute Best Liver and Onions

Wow, I am pregnant and really needed to increase my iron. I have never been able to stomach the thought of liver, BUT this was really good. My husband said it was the best he ever had. The key really is a good long soak in milk. Thanks!

Buffalo Chicken Dip

Zucchini Pie

Very good, I didn't have 3c of zucchini so I used grated summer squash and finely chopped broccoli instead. I omitted the cheese to keep the calorie count down and it still was wonderful!

Easy Apple Coleslaw

This was ok, there was something weird about the mayo and brown sugar. I added lemon juice to keep the apples from turning brown.

Cabbage Fat-Burning Soup

This was very good for being healthy. I did make some additions, I put in some chili peppers to give it some heat and some okra to thicken it up. Also I omitted the celery and replaced it with sliced zuchinni.

Raw Apple Pound Cake

I was skeptical because I don't really like apples, but my husband loves them. I substituted Splenda for the 2 cups of sugar and 1/2c of applesauce for the 1/2c of oil. It turned out great! I might make carmel glaze next time to drizzel over the top. Ok I made it again and this time I used 1/2 apples and 1/2 pears. WONDERFUL

Chocolate Chip Cheese Ball

I used reduced fat cream cheese and had some difficulity rolling into a ball, but the end product was still wonderful! Next time i will increase the brown sugar a tablespoon.

What I love most about this is how versitile it is. Try white chips with crushed peppermint, or crushed oreo's or how about milk chocolate chips with tosted coconut I usually make several different pans.
