Healthy Banana Cookies

I added cinnamon and chocolate chips. I liked them but my kids did not, probably because they lack a cookie crunch.

Lime-Curry Tofu Stir-Fry

This is a very flavorful main dish, and my family loved it. I marinated and oven baked the tofu first, as suggested by some reviewers. To avoid curdling the milk, I added the milk last, after the lime juice is absorbed by the other ingredients. Keep in mind that the final product is a little soupy, so cut and cook the veggies to preserve their crunch. Great dish!

Peanut Butter Banana Flax Seed Muffins

Great taste and texture, with crunch on the outside and very moist inside. Watch the oven temp, it seems a little high. I would suggest 350 for 25-30 min, and check the muffins early.

This is like cream of wheat on steroids! Big, savory flavors, and the heat is softened by the sooji! The leftovers were even better, as the lentils and seeds were less crunchy. Definitely a repeater.

Vegan Lemon Scones with Chia

My kids loved these scones, and they are picky eaters! The texture is a little more crunchy than the usual suspects, due to the chia seeds and the flour. Leave some honey on the table, in case the lemon overwhelms. Wonderful!

Nicola's Pad Thai

This is a wonderfully complex dish, and so easy to make! While everyone has a favorite Pad Thai, you should give this a try. If you don't have the prep time for the noodles, just place the dry noodles in boiling water for two minutes. After that, put them in a bowl with water and ice to stop the cooking process. The depth of favors and textures you get get for 30 minutes of time is surprising!

Cherry Chutney

This is one of the best chutneys I have ever tasted! I would not change a thing. The 5 spice seasoning and cider vinegar are key, so don't skimp there.
