Slow Cooker Pernil Pork
Absolutely fantastic! I couldn't believe how tender this was. I used 2 lb. boneless pork roast, cut off the butcher's netting and opened the roll a bit, spread some of the mixture in the openings then retied with string (also makes it easier to cut when finished). Marinated overnight, adding a packet of Sazon and a good sprinkle of Adobo as others recommended. Didn't have ancho chile pepper so used 1 tsp. of cayenne - should have used only 1/2 tsp. Since it was a little spicey, when meat was finished I took it out and added 2 packets of Sweet & Low to the juice, shredded the meat and returned to the crock pot for a little while. Served with Zataran's Caribbean Rice - will DEFINITELY make this again! Thanks Counntry Cook!

Roasted New Red Potatoes
BEST POTATOES EVER!!! Made almost as directed (added a few ingredients. Used parchment paper on my pan to avoid burning. I used the top rack of the oven, (always do for roasted veggies, it gives a better crisping/browning) for 60 minutes. Crispy and delicious. In addition to the salt & pepper I sprinkled a bit of garlic powder on the potatoes, and when they were done I sprinkled with grated parmesan cheese. Forget the entree, I made a meal of the potatoes. Thanks for a great side dish recipe.

Roasted Brussels Sprouts
OMG, will never put them in water again! I just took the pan out of the oven, made one pound bag of fresh sprouts, and I ate half of them already! If you use parchment paper on your pan it's really easy to shake them, and to clean up when finished, Thanks for a GREAT recipe!
