Big Ed's Cajun Shrimp Soup

Pumpkin Apple Streusel Muffins

Great, easy recipe. I made this recipe as loaves and cooked about 50 mins. I made one batch with apples and one with raisins. For the apple one, I made the streusel topping but took the sugar for it out of the sugar that went into the batter. I also substituted apple sauce for the oil and brown sugar for half of the sugar.

Mom's Zucchini Bread

This recipe was fantastic. I substituted half of the oil for applesauce, next time I might try all of it. Also substituted half the white sugar for brown sugar, and reduced the sugar to 2 c.

Orange Blueberry Muffins

These came out very good. I made these on a whim, and so I had to improvise. I didn't have enough flour, so I made up for it in equal amounts of oatmeal. I also didn't have baking soda, and used extra baking powder (although they might not have risen as much as they would have). I also substituted pink lemonade for the orange juice.

Eggplant Parmesan II

This was a great recipe, easy and delicious! Per the suggestion of others, I salted the eggplant for about 30 minutes. I made 1/3 the recipe with some pasta on the side, and it was easily 4 servings. Will definitely make again.

Glazed Meatloaf I

This is by far the best meatloaf I've ever had! Only change is that I use 1 c. bread crumbs in place of the bread. Just as good with ground turkey!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Pretty good recipe, the fish itself was really good...wonder if it was marinating it in lime juice that made the difference. I made 2 changes...first, I sprayed the breaded fish with non stick spray and baked it for 20 mins. at 425 instead of frying it in oil. Second, I used chipotle taco seasoning and salsa in the slaw instead of the chipotle pepper and adobe sauce due to the cost.

Fish Chowder

Tasty, easy recipe. I added a can of chopped clams and omitted the mushrooms. You could probably substitute some or all of the fish for clams or other seafood if you wanted to.

Chicken Tortilla Soup V

This recipe is the best, very easy, healthy, and get tons of compliments! I always make a double recipe, use a packet of taco seasoning instead of the spices, add 1 large can of beans, and eliminate some of the measuring by using 2 cans of corn, 2 onions, and 1 large box of broth.

Excellent, easy recipe. Didn't change a thing! Updated to add that now that it's cold out, I made this again but baked it wrapped in foil at 400 degrees for 20 minutes and it was just as good.

This recipe was great. I added a half can of milk and had to cook it longer, and would probably add more milk next time because it was too thick (probably from the extra cooking). But I will definately make this again.
