Walnut Tassies

I couldn't find my grandmother's recipe for "nut cups" so I thought I'd try this one. It seemed similar to what I could remember from hers, except for the nuts. She used pecans. That was the only substitute I made. The 1" balls weren't enough dough in each muffin cup, and yes I do have the mini muffin pans. I even have the little wooden gadget that pushes the dough in and up the sides evenly so it wasn't that I was using the wrong size pan. Therefore I only got 4 1/2 dozen. Otherwise they were ALMOST as good as Granny's!

Butter Rich Spritz Butter Cookies

I was disappointed in these! I wanted to make spritz cookies and couldn't find my grandmother's recipe which is always a winner. From memory it seemed like the same ingredients (except for the almond extract) so I gave them a try. The dough was very firm..hard to press out and flavor was lacking something, even though I upped the amount of vanilla called for. I'm going back to searching for Granny's recipe. I won't make this one again. :-(

Braised Balsamic Chicken

This is soooo delicious! I love the tang from the vinegar, the zip from the Ro-Tel tomatoes & the herbs add a nice touch! It is also weight watchers friendly...only 3 pts. for a 3 oz breast! I didn't use all the oil, just a spritz of olive oil spray in my non stick skillet. Served it with steamed broccoli and brown rice. This will be a regular around here!

Spicy Eggplant Parmesan

This was delicious! I am doing Weight Watchers so I made it a little more "point friendly" by skipping all that oil. I used low fat cottage cheese instead of ricotta and low fat mozzarella. I only had dried basil and garlic and I didn't have the worcestshire sauce. It was soo good! I got 3 good sized servings at 2 points each. This one is a keeper!

Monster Cookies VIII

These were good, but nothing special. I used a white cake mix and since I didn't have any nuts I added some craisins. Also a splash of vanilla. They took 15 minutes to cook in my oven. I'll try them again, maybe with lemon or chocolate cake mix.

Turkey-Stuffed Peppers

These were really, really good! And I didn't even have some of the ingredients. I'll bet I give it 6 stars when I have tomatoes on hand, and cheddar cheese. I only had mozzarella, but they were awesome!

Stuffed Green Peppers

These were really good...a nice change from my usual recipe. The only change I made was to use red and orange peppers instead of green, because that's what I had on hand. Oh...I did add a little Trader Joe's 21 Salute Seasoning along with the basil. Mrs. Dash or something similar could be used as well. I did not boil the peppers first nor did I brown the ground beef. I did baste them with the sauce occasionally while cooking. I did follow some others advice and double the sauce!! This one is a keeper.

Baked Buffalo Chicken Strips

These taste really good...they're probably worth 5 stars if done correctly, but I didn't have buttermilk or Egg Beaters so I used plain milk and eggs. Also, I didn't pay close attention when reading the recipe and didn't dip in the panko BEFORE the egg, only after. And I didn't add the last splash of pepper sauce. We added to taste as we ate them. I will definitely try making this again...the right way!

Cinnamon Bars

These turned out awesome! Not too sweet, slightly moist and nutty. My pan was 15x10x1 and worked perfectly. (Check out the picture I posted.) I wonder if some of the reviewers missed the fact that the oven should be 325 not 350. Mine were not dry or crispy at all. I think the use of the word "pour" batter into pan was misleading. I had to "press" it with my fingers. I will definitely make these again!

Excellent! I used chicken tenderloins and didn't bother to pound them. I also added a little cayenne pepper with the salt and pepper because we like a little zing. This one is a keeper!

Almost Stuffed Peppers

This was really good. It seemed like it wasn't saucy enough, so I added a small can of V8 juice..perfect! I also added just a sprinkle of crushed red pepper for some zing! It's a keeper!

Cake Balls

I made 2 batches of these for my niece's bridal shower. They were very good and got lots of great comments. I made one lemon cake mix with lemon frosting and dipped in white chocolate, and one chocolate cake mix with caramel frosting dipped in milk chocolate. Both were delicious. I found I needed the entire 16 oz package of chocolate coating for each batch, 3 oz. would never have worked! Also, I found that I had to freeze the cake balls first before dipping because they tended to fall apart. Then, because the cake balls were so cold, I had to keep re-melting the chocolate because it got thicker as it got colder. I used my pampered chef cookie dough scoop to make the balls, it worked perfectly! I didn't like the hassel of dipping...wish there was a better way that was easier. Otherwise...they were fantastic!

Pumpkin Cookies I

I've been making these for years! I never put in raisins, but I do use chocolate chips and walnuts. YUM! They stay soft, they're not chewy and they don't really brown. Just cook them until they're done, don't overcook and don't expect them to spread out like regular cookies, they don't. But they taste soooo very good!

Golden Yam Brownies

This was really good. I made it the first time exactly as the recipe was written. It was too "cakey" to be called a brownie so I think I will cut back on the eggs next time. Maybe then the texture will be more like a brownie. The only change I did make was to cut the glaze in half. I spread it over the warm cake & when it cooled it was like the glaze on a donut rather than a frosting. Perfect!

Fantastic! But you've got to try the original filling. I know it sounds weird, but it actually comes out similar to the filling of a twinkie! I'm sure the cream cheese filling is good too, but try the original, it's great!
