Chicken Tortilla Soup in the Slow Cooker

This is quite close to how I make Tortilla Soup and it's great. The beans make the soup thick and filling and the spiciness is tangy and warm.

Broiled Tilapia Parmesan

It was amazing. Followed the recipe exactly and found the fish moist, the sauce flavorful but delicate. It was even a hit with my two small boys "the best 'chicken' ever, mom!" I just smiled.

Awesome Slow Cooker Pot Roast

I've made pot roast several times this way. It's a great recipe. You can add condensed French onion soup in place of the dried soup mix, don't dilute. I also add a generous amount of cracked pepper to the mix before cooking. Here's a general tip: when I first tried to make roasts in the crockpot they would always come out tough. It took me several frustrating tries before I looked for advice. Here's what I was told: meat in the crockpot will at first toughen and then soften as the connective tissue breaks down. I was checking the temperature and stopping the roast when it hit 170 degrees as if it were in the oven. When I stopped checking the roasts and started leaving them in for 6 or more hours they achieved tenderness.

Crunchy Chicken Fingers

We've made these with saltines and a good helping of thyme. Something about thyme is perfect on this. You can also drizzle margarine or butter over crackers or chips to make the coating golden and crispy.

Grands!® Ham and Cheese Melts

I tried Pillsbury Croissants instead and rolled hem around the meat and cheese. Because of that some of the dough was undercooked. I used cheddar instead of American Cheese. I also added sesame seeds to the top of the egg glaze. They did look pretty. My husband and I liked them, our two young kids did not. They were having a picky moment, not the fault of the recipe. Will probably try again.

Bacon Ranch Chicken Skewers

We've made this a few times, usually for company because its an impressive dish. The idea of weaving bacon around a skewer is great! I'd like to advise leaving gaps between the meats on the skewer so that everything cooks well..
